U.S. Wellness is pleased to announce excellent feed back on the grass-fed organic veal roll out on February 10th. More detail below on the exemplary conditions the New England dairy farmer has provided for this needle in a hay stack discovery.

All systems should be ' green ' on February 24th for fresh forage raised beef. The plan is to commence shipping selected bundles of grass-fed fresh beef on the first and third Wednesday each month. Orders will need to be in by the preceding Thursday noon in order to arrange for fabricating specific quantities of product. The meat will be packaged in barrier film which will give you the option of freezing if not consumed in a timely manner.

Suggestions will be immensely appreciated as this will be a challenging endeavor from the fabrication and logistics stand point.

    How Is Grass-fed Organic Veal Raised?

    U.S. Wellness is honored and fortunate to have networked with Abe Collins and Cimarron Farm in the great state of Vermont.

    Cimarron Farms uses the old fashioned method of raising calves with their mothers on some of the finest pasture forage in New England. Contrary to the commercial method of the bottle fed calve stalls which is far more challenging to the calves. The 21st century method weans the calf after mother's colostrum dries up in approximately 4 days after arrival.

    Certified organic veal calves raised on grass are few and far between; consequently, we hope you appreciate the effort for all involved in this project.

    The next cut selection arrival will be fabricated much more tightly in package sizing as we apologize for some variation in this round. U.S. Wellness has discounted the average weight by 15% to compensate for some portion size variation.

    Several customers have raised the humane growing condition question and we are pleased to respond these animals led the perfect life for a veal calf. In short, their lives were in the upper 5% for the lifestyle they led on outstanding forage at their mother's side.

    Some cuts are out of stock but many remain. The ground veal has an outstanding flavor and texture. To add to your shopping experience, we suggest you consider veal cutlets, rib chops, loin chops, sirloin steaks, chuck roasts, 4 rib rack, 7 rib rack, bottom round roasts, eye of round roasts, shoulder primal, top round primal and more.

    Dear Dr. Serrano,

    In your Jan. 20th answer to a question about using grass-fed meats to help thyroid function, you mentioned that omitting wheat and possibly milk can help a person who has thyroid problems or immune system problems. I have found that omitting wheat from my diet has made me feel much better and made it so much easier to control my weight despite having hypothyroidism. My question is, when you wrote "milk" -- did you mean all dairy including butter, cream and hard cheese from any animal, ie, goat, sheep, cow and pasteurized as well as unpasteurized?

    The reason I wrote milk, is not the reason you are thinking about. I mention dairy and wheat because they are two must common allergens that might affect your thyroid but I could also add peanuts. All these have something in common, a certain protein that our body can become allergic to and affect our organs.
