We hope everyone is enjoying this warm month of May! We have been blessed with plenty of sunshine, spring temperatures, adequate rainfall and have managed to miss the severe weather.  We cannot complain and our animals couldn't be happier!  

 

Luckily the weather was also perfect last week when we were honored to host some very special guests at our farms - Bill and Hayley from the Food Lovers' Primal Palate made the trek to Missouri for farm tours, a rustic barbecue and even had time for some fishing.  For a sneak peek of their visit, check out the video section of their website for an unedited teaser clip of their first encounter with our happy cows!  More photos and videos will be posted soon - in the meantime, check out the photo album of our barbecue on Facebook.    

 

CBS News reported last week about some startling new facts on the obesity epidemic.  Currently over 1/3 of Americans are obese, and this huge number is expected to continue to rise.  They are projecting a 42% obesity rate by 2030.  How much longer before we hit 50%?  How much longer before the average American consumer realizes they need to change their diet?  What are these drastic numbers going to do to the skyrocketing cases of diabetes, heart disease and cancer?  There are so many simple ways that people can start taking control of their diet.  Some easy places to start:  

Since these numbers have come out, more people are getting involved.  The Institute of Medicine has released their plan to completely change the way Americans look at nutrition and exercise.  We were happy to see the schools were a strong focal point of this plan, focusing on increased physical education classes and hopefully improving school breakfast and lunch menus.

Is it ethical to eat meat?  The New York Times asked this question and it immediately sparked interest and debate from both sides.  They turned it into an essay contest that received over 3,000 entries.  We want to thank all of our readers that took the time to enter, and spread the good word about grass-fed beef.  We were happy to see that the chosen winner is indeed a meat eater, who was actually once a vegetarian.  We encourage you to read his winning essay and leave your comments!

Speaking of eating meat - CBS San Francisco did an interesting piece this week on a new documentary: In Search of the Perfect Human Diet - a story about one man's quest to live longer than his doctors were predicting.  He faced a 50% chance of dying within the next two years, and tried every diet out there until he found one that completely changed his health and his life.  The premiere is selling quickly, but if you will be in the San Francisco area this Tuesday, May 22, you can get tickets here

I've been reading a lot of articles lately about shift work sleep disorder, regarding those of us who work overnight shifts and sleep during the day.  I've been working nights for 10 years now, enjoy my job, and am completely used to my hours and sleep schedule.  Should I be concerned?

Great question!! After getting your question I had to look up some articles on what sleep cycles did and what they do for the human body. I had to refresh a little bit. I came across a study and you seem to be the example of this study. The human body adapts and your body has adapted well. A lot of people are not able to adapt. They can't seem to get the circadian rhythms corrected so they become depressed, sleep deprived, gain weight, etc.  

 

The fact that you are used to your hours, sleep schedule is in tune, and you are not showing any signs of depression point that your body has made that ultimate adaptation. The long term effects of this have not been studied.  

 

However, with the way you are going, it seems that the crucial point where your body did vs. did not make the transition to a day sleeping and night working schedule transitioned well. If you are eating well, sleeping well, kicking ass at work, my level of concern is low.  

 

However, there have been studies that have shown that those on shift work have a higher likelihood of certain cancers.  I would make sure that you keep up to date on your labs and make sure you see your primary care physician consistently.

Losing Weight When Obese Can Prevent or Cure Diabetes, Whatever the Initial BMI, Study Suggests


Lowering your BMI by five units can dramatically reduce your risk of diabetes, whatever your initial weight, says new research presented at the International Congress of Endocrinology/European Congress of Endocrinology in Florence, Italy. The findings show that even severely obese patients with diabetes can potentially rid themselves of the disease.

Addressing diabetes is a major priority for health providers worldwide given the vast global prevalence (approx. six to seven per cent of the world's population; around 285 million people) and its severe complications including amputations and heart disease. Surgery for weight loss has an unexpectedly rapid and substantial therapeutic effect on diabetes rates. Understanding why weight loss has such a dramatic effect on diabetes is the focus of this study by Associate Professor Markku Peltonen from the National Institute for Health and Welfare, Finland and colleagues from the University of Gothenburg, Sweden.

The researchers enrolled the 2010 patients from the Swedish Obese Subjects study who had received bariatric surgery and 2037 obese controls receiving conventional (non-surgical) obesity treatment. They were assessed for BMI and diabetes at baseline (before surgery in the surgical group), and at two and 10 year follow-up.

Among patients with BMI<35, 35-40 and 40-45 who did not lose weight after two years, type 2 diabetes incidence rates were 6.5%, 7.7% and 9.3% respectively. Among those with initial BMI 35-40, 40-45 and ≥45 who lost at least five BMI units after two years, type 2 diabetes incidence rates were 2.4%, 2.0% and 3.4% respectively, clearly showing that lower rates of diabetes can be found among obese patients who have lost five BMI units through any means. Further analysis showed that the rate of patients cured of diabetes after losing five BMI units was independent of the starting BMI at all BMI levels measured. This trend was also observed after 10 years post surgery.

The findings suggest that losing five BMI units, the equivalent of approx. 16kg for a 180cm tall 35 year old man weighing 130kg (BMI 40), can make a real difference to your health by reducing your likelihood of having type 2 diabetes. Furthermore, it suggests that this is true for all patients, as even those who were severely obese showed dramatic improvements.

Associate Professor Markku Peltonen, Director of Department at the National Institute for Health and Welfare, Finland, said:

"Our findings show that, whatever your starting weight, losing five BMI units can dramatically reduce your risk of having type 2 diabetes after two and ten years.

"Dropping five BMI units is no mean feat, as the human body is not very good at losing weight. But patients of any weight should take encouragement that by doing so they can really improve their chances of a healthy future."

Chicken Basil Meatloaf

Chicken Basil Meatloaf

 
Ingredients: 
  • 2lbs US Wellness Meats Ground Chicken 
  • 2 eggs, whisked 
  • 1 cup almond flour/meal 
  • 1 cup fresh basil, chopped 
  • 1 tablespoon garlic powder 
  • 1 tablespoon onion powder 
  • 1 teaspoon dried parsley 
  • salt and pepper, to taste  

Directions:

  1. Preheat oven to 375 degrees. 
  2. Mix all ingredients for meatloaf in a bowl. 
  3. Place ingredients into to loaf pans. 
  4. Bake for 25-30 minutes or until there is no pink remaining in the loaf. 
  5. Eat! 
  6. OMG, that was easy.
