The transition to our new building continues.  Tomorrow afternoon at 3:00pm CST we are moving our phone service to the new facility.  Our vendor does not expect any issues so our fingers are crossed that it will be a smooth transition.  If you do experience trouble contacting us by phone, please try again later or email us eathealthy@grasslandbeef.com.  We will be here ... we just might not be able to take your call.

Do you want to avoid gaining weight through this month long celebration of rich foods and plentiful drinks?  Read Scott Mendelson's article, and join Carol in getting a jump start on looking great for her Spring beach vacation despite the holiday festivities.

Getting caught up in the craziness of the hustle and bustle this time of year is easy to do.  If you have a minute check out this "Gratitude" video.  It is a great reminder that today is the only day we have and we can make it a good day by the attitude with which we choose to approach it.

Hoping you are enjoying this holiday season,

John, Lee Ann, Tressa, Laura, Courtney and Deric on behalf of the farm families of US Wellness Meats.

Athlete's Corner - Scott Mendelson Q&A
Quick Body Weight Sessions to Accelerate Fat Burning and Boost Energy
Scott- I want to get ahead of the fat burning game before this year ends so that I have good habits in place for the New Year.  I need to lose between 15 and 20 pounds of body fat to look good in a bathing suit and my husband is in the same situation.  We have a vacation planned for Key West in Late March and want to look our best!  We both battle low energy at about 6 pm each day which can lead to bad food choices and low productivity.  Our energy levels are very good up until that time and we exercise first thing in the morning.  Ideas?
~Carol.

Carol-
I agree with your mindset.  You do not want to wake up January 1 with a ton of regret
and new body fat. Putting off success until the New Year is a failed strategy and ends up
piling on body fat fast especially when many days of poor eating and low activity are strung together.  Take a look at these important strategies for finishing the year strong.  Fat
storing momentum builds quickly during December and can take many weeks or months to reverse...

Honey Bourbon Balsamic Chicken Wings
Author: Allyson Meyler, Reclaiming Yesterday
Difficulty: Moderate
Time: 45 minutes
Serves: 2

Ingredients:
  • 3.5 lbs chicken wings
  • salt & pepper
  • drizzle of olive oil
  • 3 oz bourbon
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • black pepper
  • 1/2 tsp crushed red pepper (optional)

Directions:
  1. Remove chicken wings from refrigerator to take off the chill. Preheat oven to 400.
  2. Rinse chicken wings and pat dry. Arrange in one layer on a baking sheet, use a metal rack if you prefer crispy chicken wings. Season with salt and pepper and drizzle with olive oil.
  3. Bake wings for 30 minutes, flipping once halfway through.
  4. While wings bake, add all ingredients for sauce into a small saucepan. Bring to a boil,
reduce heat, and allow to simmer until sauce has thickened enough to coat the back of a spoon (about 15 minutes) Sauce will continue to thicken as it cools.
  5. After 30 minutes of baking, remove chicken wings and transfer to mixing bowl. Pour 3/4 of sauce over wings, using tongs to toss and coat. Return to oven for an additional 5 minutes.
  6. Transfer wings to serving dish and drizzle with remaining sauce.
