This past week we saw the first major winter storm (Goliath) of the season.  Hopefully you and your loved ones stayed safe and warm through the tempest.  As we head into 2016 those of us in the Mississippi Valley region will continue to feel its effects for weeks to come due to high water levels of the local rivers. 

Looks like winter's colder weather is going to stay for a while.  Our Sale items for the week include some essential items for soups, broths or stews to help keep you warm.  Ground chicken, sugar-free beef bacon slices, chicken stock, duck stock.  A couple of our popular heat and serve meals pot roast and gravy or bbq short ribs are also on sale this week.

We have a huge list of restocks for the week (see below) including some of our pork favorites like sugar free pork bacon, pork shoulder roast, pork sirloin roast, ground pork, and baby back ribs.

There is good news for those of us experiencing that creeping weight gain and fat accumulation that seems to accompany middle age.  A new study out of Japan indicates that fish oil can help to increase our bodies ability to metabolize fat.  Read our Recent Health News article for more information.

Not all fat cells store fat, some metabolize fat to maintain body temperature.  In addition to the health benefits of slowing fat accumulation recent research indicates that fish oil activates receptors in the digestive tract, fires the sympathetic nervous system, and induces storage cells to metabolize fat.

stuffed mushroons
Holiday Stuffed Mushroom Appetizer

Total Time: 47 min
Serves: 24

  • 24 cremini mushrooms, cleaned
  • 1 tablespoon solid cooking fat, melted
  • pound ground pork 
  • cup minced shallot
  • 4 garlic cloves, minced
  • cup packed fresh parsley
  • 1 teaspoon sea salt
  • 2 tablespoons white wine
  1. Preheat oven to 450 degrees.
  2. Line a baking sheet with foil or parchment paper.
  3. Snap the stem off each mushroom, leaving a well in the cap. Set the stems aside.
  4. Toss the mushrooms in the melted fat. Place them cap up on the baking sheet.
  5. Roast mushrooms for 10 minutes in the hot oven. Flip each mushroom and roast for another 10 minutes.
  6. While mushrooms are roasting, place shallot, garlic, parsley, and mushroom stems in food processor. Pulse to combine mixture.
  7. In a large bowl combine raw pork and salt with the veggie mixture.
  8. Stuff each mushroom well with a generous spoon of pork filling.
  9. Place stuffed mushrooms back on sheet and sprinkle with wine.
  10. Roast for another 12 minutes or until filling is slightly browned on top. Serve hot.

    Notes: Yes, it is okay to cook with alcohol during the elimination phase of AIP. The alcohol will cook off. If you'd rather skip the wine though, the recipe will still turn out great.

  • $75 minimum purchase requirement, since we have built the cost of shipping into the price of each product.
