Did you hear ... Spring is Coming!!!  Well at least according to Punxsutawney Phil, who did not see his shadow at 7:20 am yesterday morning.  

Did you know that Groundhog Day was established by a hunting club in Punxsutawney, where an annual feast was held where it is rumored that both groundhog and woodchuck were on the menu.  Nice way to say thank you for the weather prediction!!!  Luckily for our rodent weatherman we have better options for you on sale this week.  Fully Cooked BBQ Beef Short Ribs, Ground Chicken, and Beef Eye of Round Roast.  Check out the full list of sales items and volume discount items below.

NEW ITEMS FOR THE STORE ... As promised we are adding several new products to the store this month.  These are being introduced on a trial basis, so give them a try and then let us know what you think.  If we receive good feedback they will become permanent selections in our store.

This week we are excited to introduce Organic Turkey Breast Roasts thoughtfully raised, the way nature intended free from GMOs, gluten, artificial ingredients, preservatives, hormones, antibiotics and growth stimulants.  Hand-netted, skin-on whole boneless breasts, you will be amazed at how flavorful, tender, and juicy these birds roast up.

Punxsutawney Phil says to expect swimsuit weather by the end of February.  Maybe not, the National Oceanic and Atmospheric Administration pegs Phil's accuracy at about 45%.  But just in case read Scott's fitness article.  In it he shares some tips for keeping on track with your healthy eating and exercise plans while still enjoying Super Bowl treats this Sunday.

One last Super Bowl appetizer idea from Wellness Mama is featured in our Recipe Corner (see below) ... although we think this one for Bacon Chicken Bites looks like one that will stay at the top of your recipe list all the year through.

Scott~ The Super Bowl is a huge deal in my town and we will be hosting a party for at least 50
people.  I want to serve our guests great food choices as most of them are aiming to lower body fat levels currently as am I.  I am getting ready for a vacation in April and need to lose 15-20 pounds of fat to be "beach ready" What nutrition strategies do you suggest if I know I am going to consume some "treats" to minimize the damage?  Kerry and Roger

"Recently found out one more was coming to dinner (in less than 30 minutes and I had planned the meat portion of the meal for 2 with no leftovers in mind) so I grabbed these out of the freezer.  Into a casserole dish in a low heat oven and when dinner was ready so we're the ribs.  Added just enough "extra" to the meal and my son and his girlfriend loved them! They asked for the leftover BBQ sauce to use with leftovers they had at home as well. Thanks for a great product."

Bacon Chicken Bites

Prep Time: 10 minutes
Cook Time: 25 minutes
Serves: 6+ 
 
Ingredients:    
  • 1 pound chicken breast (pastured)
  • 1 package of nitrate free bacon
  • 3 tablespoons dijon mustard
  • 3 tablespoons raw honey
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • goat cheese for garnish (optional)
     
Directions:  
  1. Preheat the oven to 425 degrees.
  2.  Cut the bacon slices in to thirds.
  3. Cut the chicken in to bite-size pieces.
  4. Wrap each chicken piece with a piece of bacon and secure with a toothpick if needed.
  5. Place in an oven safe dish (preferably with a rack to keep them off the bottom, but this is not required)
  6. Mix mustard, honey, and spices and pour/rub on top of each piece of bacon/chicken.
  7. Bake for 25-30 minutes or until bacon is browned and chicken is completely cooked.
  8. Cool slightly and serve.
  9. TIP: For extra flavor, garnish with a little goat cheese. Enjoy!
     
Notes: It can often be hard to find grain free, dairy free, healthy options when we aren't eating at home or get invited to a dinner event. These bacon chicken bites are my solution. Whenever we go to a friend's house or potluck, I bring a plate of these to share. We always have something we can eat, and I haven't found many people who don't like these savory appetizers. The other best part? These cook in half an hour and only use one dish! They are protein packed and filling and my kids love them. I can put these in the oven, go get ready, and they are ready to go when it is time to leave. If you are looking for an easy dish to bring to parties and potlucks, I suggest these!
