spring beginnings
Dear John,
Spring is the time of new beginnings.  At the heart of what we do is the belief that we need to eat right to take care of ourselves. And the best way to do that is to take care of the land, and the animals that become our food.  We take very seriously our commitment to provide you with the highest quality food products. This starts with paying attention to where our animals come from and how they are raised.  Here is a link with a little more information about the farmers that helped get US Wellness Meats started.   If you share similar beliefs about your food we hope you continue to support us, and maybe you can help friends or family make a new start this Spring by sending them our way.

On sale this week are some tried and true staples 85% Lean Burger Patties and Eye of Round Roast, and for those of you looking for beef alternatives we have Lamb Loin Chops, Lamb Kabobs, and Duck Wings.

Midweek restocks include all varieties of Turkey Jerky -- Plain, Spicy, Cajun, & Cranberry.  Sausage sliders (Italian and Polish) are back in stock just today. And finally Beef Oxtail has also been restocked if you're making any soups or beef stock soon.

If you want to make something other than Corned Beef and Cabbage for the upcoming St. Patrick's Day festivities,
don't miss today's Recipe Corner featuring Stan Fishman's Traditional Irish Brisket Pot Roast. This recipe calls for our new online store item Beef Brisket Point- pair this delicious meal with a genuine Guinness and you'll feel almost truly Irish!  If you overindulge on your Guinness for St. Patty's Day, you might want to try Stan's Ulster Fry recipe which has been known to help many a leprechaun recover the day after.

The Recent Health News article for the week, is an invitation to Grassfed Exchange's 2016 Conference in Perry, GA April 27-29.  This years' theme, Regenerating Lives One Farm at a Time, focuses on a farming model that regenerates the land, provides profit for the farmer, and provides a quality of life enhancing product.  If you want to learn more about where your food comes from and how it can be produced in a sustainable manner that is good for you, the land, and the animal come see us at the conference.

The purpose of this event is to help producers, processors, distributors, and consumers grow in the knowledge of the grass fed industry.

Recipe Corner
 Traditional Irish Pot Roast

Author: Stan Fishman

"Most Americans think of corned beef and cabbage when it comes to a traditional Irish meal on St. Patrick's Day. One of the glories of Irish cuisine is the magnificent quality of the native ingredients. Most of the beef raised in Ireland is still grassfed and grass-finished, and raised on small farms. This recipe depends on the quality of the ingredients, and the better the ingredients, the better the dish.

The new beef brisket point introduced by U.S. Wellness Meats is perfect for this recipe. It has the deep beefy flavor of grassfed beef, and a nice fat cap that is needed for this recipe.
It is important that all the other ingredients be of high quality as well, meaning organic (or  the equivalent) vegetables and herbs, Guinness® stout from Ireland itself, and rich, deeply flavored grassfed beef broth. U.S. Wellness Meats sells an excellent beef marrow bone broth, or you can use your own traditionally-made beef broth, made from grassfed beef and bones. This recipe is absolutely delicious and the meat is very tender and flavorful."

That takes care of dinner...now for breakfast. Try out Stan's Irish Ulster Fry, an Irish breakfast classic that will go down easy any day of the week, and especially if you've had a little to much fun in your St. Patty's day celebrations!
