We've talked about using nose to tail eating habits to get the most nutrition out of your food. Today, we have another example of these sustainable practices and it's a secret many fine restaurants are adding to their menus...bone marrow!
Why would you put a bone on the menu? Bone marrow is not only loaded with nutrients, but roasted becomes a sumptuous treat. US Wellness has a variety of options for marrow bones, but we think the best for roasting is the canoe cut.
These are shank bones cut lengthwise so the marrow is more accessible. Cutting a shank bone lengthwise is a tricky process and can be dangerous, so we advise leaving that up to the experienced meat cutters like Mel and his crew here at US Wellness.

Golden Globe Update | Less Than 1,000 Miles To Go
Uku Randmaa sailed into port on Sunday, March 10th after nearly 30,000 nautical miles around the globe. Uku becomes the 3rd place finisher. Congratulations Uku on surviving this grueling race. Our own Istvan Kopar is close behind with less than 1,000 miles remaining. If he can continue to find wind, he's expected to reach France within 10 days or so.
