Grass-fed Steak Tips

There are many ways to prepare a flavorful steak. Depending on the tools you have available, a great steak can be prepared by grilling, braising, roasting, sous vide, or cooking it in a skillet over a fire or on a stove top. The more you practice your preferred method of cooking, the better you'll be. And, the benefits of practicing are pretty substantial. Think about the savory aroma of a thick juicy steak cooking and the symphony of flavors when you take that first bite. Cooking a steak isn't rocket science, but there are a few things you can do to improve the finished product. 

 

1. Buy good quality, grass-fed meat - You'll appreciate the difference in flavor and nutrition between 100% grass-fed and conventional.

2. Choose a cut that is right for your cooking method. Ribeyes and striploins (NY Strip and Delmonico) are excellent for nearly every application. 

3. Proper Prep - Season and/or marinate the steak with your favorite all-natural seasonings or rub. Keep it simple!

4. Searing - It's almost always a good idea. For some cooking methods, you'll sear before and for others you'll sear after the meat is cooked. Some find searing the sides helps lock in flavor and juices.

5. Don't overcook - We recommend medium rare. Watch the internal temp and set a timer. It's impossible to uncook a steak, so check the internal temperature with a good meat thermometer. Take it off when you reach the desired doneness and don't wait too long. Grass-fed cuts cook at least 30% faster.

6. Rest - Cover and let your steak rest for a few minutes before serving. This will make for a juicier steak.

As it turns out, a Delmonico steak isn’t actually a particular cut. Back in the mid-19th century, New York’s first premier steak house, Delmonico’s Restaurant located in lower Manhattan, used to serve up the original Delmonico Steak. The thing is, the Delmonico Steak just happened to be whatever the butcher thought was best that night. The cooking method remained mainly the same, but the cut itself would change.
