Our ancestors ate nearly every part of the animals they hunted or raised. What they couldn't eat was used for clothing, shelter, fuel, utensils, glue, bowstring, etc. There was little or no waste. Organ meats and fats were consumed as some of the most prized parts of the animals. Organ meats are like superfoods, loaded with high quality nutrients the body needs to thrive. Without modern conveniences, winter could be a challenging time especially in cold climates. Food could be scarce so organ meats were that much more important for survival. Today, we're seeing a resurgence in appreciation for these nutrient dense foods. With finite cuts available per animal, many organ meats, ribeyes, tenderloin filets, and prime cuts are limited in quantity. Compound that with the fact that it takes our farmers nearly twice as long to raise an animal solely on grass, and you can hopefully understand why we sometimes have items out of stock for awhile.

This blend has become extremely popular because it can be used in so many meals and recipes and the nutritional benefits of organ meats are an added bonus.
