The 2006 calendar has crossed the half way mark and the farm families of U.S. Wellness Meats would like to say "thank you" for your interest and patronage in our grass-fed endeavors.

Based on trade show work this year, we estimate 3% of U.S. consumers truly understand the difference between grass-fed and grain fed meats. We feel honored to be in your presence as you are the early adopters whose health will have an unfair advantage over the other 97% of the population.

    Beef whole frozen tenderloin sub-primals weighing 3.25 pounds on average are now available after many requests. You can create your own tenderloin filets at an excellent savings or cook whole in true gourmet style.

    We produced an experimental batch of pork breakfast sausage in an 8x1 format (8 two ounce link per package) that we are looking for feed back on. This product is all natural pork and antibiotic free from birth.

    U.S. Wellness is pleased to note several new items added recently. We have produced a lamb tallow shortening in 4.5 pound pails to compliment the beef tallow shortening that has been very popular. Lamb marrow bones were added to take some pressure off of the high demand beef marrow bones that have been difficult to stock of late. One pet owner indicates the lamb marrow bones are more brittle than comparable beef bones.

    Jesse Marunde hosted a local strongman contest in Sequim, Washington last weekend that generated a record number of contestants. Contestants under Jesse and Callie's training program carried off a majority of the prize hardware.

    After a lengthy string of losing seasons, the Sequim, Washington high school football team adopted Jesse's stongman training regime for the high school team. In year one, during the 2004 season, the team finished 2nd in the state of Washington and made it the quarter finals in 2005. Athletes find the new tools much more fun to work with than regular weights. Plus, it increases agility and stamina skills.

    Jesse is currently consuming 100 pounds of U.S. Wellness beef per month.

    Strongman, Jon Andersen, is still consuming 4 pounds daily of U.S. Wellness burger in training for upcoming IFSA sanctioned events.

    Meat, Lamb, Pork, and Butter


    Do not forget to take advantage of the 40 pound $25 discount by ordering 40 pound combinations of beef, lamb, pork, butter and raw cheese. This is our way of saying thank you for purchasing in volume. This can be any combination of products totaling 40 pounds and does not have to be specific to any category. Each 40 pound interval will yield the discount. For example, 80 pounds of product will yield a $50 discount and a 120 pound purchase will yield a $75 discount.


    Recipe: Sweet and Tangy Grilled Flank Steak

    Ingredients:

    • 1 to 1.5 Lbs. flank steaks
    • 3/4 cup unsweetened pineapple juice
    • 1/3 cup (RealLime) lime juice from concentrate
    • 1/4 cup steak sauce



    Instructions:

    • Score meat by making shallow diagonal cuts on one side at 1 inch intervals in diamond pattern. Repeat on the other side. Sprinkle with salt and pepper. Place meat in plastic bag and set in shallow dish. For marinade, combine pineapple juice, RealLime and steak sauce in small bowl. Pour over meat and seal bag. Marinate in refrigerator 4 to 24 hours, turning occasionally. Drain meat, discarding marinade.
    • Grill meat on rack of uncovered grill directly over medium coals until desired doneness, turning once (allow 12 to 14 minutes for medium). Garnish with fresh herbs, pineapple and tomatoes if desired. To serve, slice meat thinly across the grain.
    • 2- 4 servings
    • 5 minutes marinade prep and 4 to 24 hours of age
    • 12 - 14 minutes to cook to medium and prepare for the table


    Minimum Purchase Reminder


    Our new format enacted in April 2005 requires a $75 minimum purchase and a 7 pound minimum combined purchase of beef, lamb, pork, raw cheese, single piece poultry, and butter.

    The issue is the bulk chicken and ten pound cheese bundles originate from separate cold storage centers where those products are produced. It is not efficient to ship one package of beef as a stand alone item when the balance of the order originates 400 miles away.

    The shopping cart will keep track and remind you if you are under the 7 pound limit for a combination of beef, lamb, pork, raw cheese and butter purchases. Red font will appear under the shopping cart if you are under the minimum price or pound requirements
