We should take a moment out of our busy days and reflect on all of their sacrifices that our fathers have made for us, their children. Often overlooked and underappreciated, our fathers have shaped us and our lives by their hard work, dedication to their families and their love and guidance.

We need to let all fathers know that they are loved and appreciated, not only on their special day, but every day.

U.S.. Wellness will complete a super weekend today at the Aspen Wine and Cheese festival. This marks the 25th year for this stellar event.  Hats off to the organizers as the hospitality was as exceptional as the weather.  We were impressed by the number of savvy consumers and restaurant folks that understood the difference between grass-fed and regular beef.  We can't wait until 2008!

Omega 3's Lower Blood Pressure
(Reuters) A diet with liberal servings of grass-fed beef, fish, nuts, grass-fed dairy butter and cheeses rich in omega-3 fatty acids can help lower a person's blood pressure, according to a study.

The study looked at diet and its relation to blood pressure in 4,680 men and women, ages 40 to 59, who lived in Japan, China, Britain and the United States.

They all provided detailed descriptions about diet and alcohol consumption, gave urine samples, and had their blood pressure measured twice at each of four study visits.

Researchers then adjusted for 17 variables known to influence blood pressure such as age, gender, weight, salt intake and exercise.

The people who ate diets rich in omega-3 fatty acids had lower blood pressure, on average, than people who ate diets with less of the nutrient, the researchers reported in the American Heart Association Journal Circulation.

"With blood pressure, every millimeter counts. The effect of each nutrient is apparently small but independent, so together they can add up to a substantial impact on blood pressure," said Dr. Hirotsugu Ueshima of Shiga University of Medical Science in Otsu, Japan.

Fat Is Not the Enemy

People often refer to the "French Paradox." This is the notion that French people eat foods high in saturated fat, but never get fat. To me, that's not a paradox. There's no convincing evidence that saturated fats pack on the pounds.  It's more useful to think about the "American Paradox" - a nation full of unhealthy people obsessed with healthy eating.

At the root of this disorder is the guilt Americans feel when they eat foods they really love - like steak, eggs, and bacon. All the favorites that we've been conditioned to fear with the dreaded word "cholesterol." Most sources tell you to avoid fat in favor of low-fat, vegetarian, or whole-grain artificial diets. But if you take a closer look (and avoid the commercial interests), you'll discover that the secret to reducing bad cholesterol isn't avoiding fat. Studies show that if you combine the right nutritional elements you can reduce your bad cholesterol (LDL) as much as, and in many cases more than, the low-fat junk diets or even prescription statin drugs.

Avoidance of fat in favor of grains will increase your risk of heart disease, because diets that are high in grains promote high insulin levels. And high insulin levels have been shown to have a direct correlation to heart disease. So here's the key: Choose the right fats (rich in omega-3 fatty acids) and healthy proteins (rich in essential amino acids).

Choosing the right fats means eating more fish and the right kind of red meat. Fish is high in omega-3s. It also has a complete mixture of all the essential amino acids in a bio-available, rapidly absorbable protein.  And, yes, you can still eat red meat, even steak. But choose cuts of meat from naturally raised, hormone-free, grass-fed animals. That's the important caveat.

Studies show that grass-fed beef gives you one of the best sources of omega-3s. What's more, grass-fed beef has high levels of B vitamins and CoQ10, the most powerful heart nutrient on the planet.

Dear Dr. Serrano,
As a nutrition therapist I love to advocate for the inclusion of grass-fed meats and healthy fats in the diet. I have two questions:

Much of the information and testimony available to share with my clients comes from accomplished athletes or vigorous, robust individuals. People who are overweight and out-of-shape are more concerned about including fats and red meat in their diets.

Aside from total amount of food eaten each day, do you feel the role of
grass-fed meat and healthy fat should be different in the diet of a person just beginning the road to fitness? Would a pemmican bar  still be a good choice for a snack for someone who is not fit and healthy?

My second question is in regard to cooking the meat.
My research suggests that rare meat and perhaps even some raw meat is important. From what I have researched, if you have to overcook your meat in order  to eat it-perhaps you shouldn't eat it?

I encounter so many people who are afraid of meat or do not like it (unless it is overcooked). What do you tell people about preparing their meat?

Dear Jennifer:
Jennifer, my expertise is performance, and I love dealing with athletes, especially if they play real sports like baseball, football and softball.

After seeing over ten thousand patients, I find that under eating is one of the biggest mistakes I see, especially under eating--but eating a lot of junk food. Every patient that I see gets a complete physical and emotional exam, and I take blood, saliva, or urine samples, depending on what I need, and then I make decisions on what to do. I have never cured a patient because I don't cure anybody, my patients cure themselves; I only give guidelines.

In my practice I use a lot of meat. I also utilize a  'fat loading day', with organic meats, fats and extra virgin olive oil and vinegar. I use this technique with my overweight patients, because I have to teach the body to burn fat and to do that the body has to eat fat. There is no one diet that works for everyone, because of differences related to:
1-sex
2-race
3-exercise
4-relationships
5-work
6-country
7-height
8-drugs
9-support
10-motivation
11-weight

With my overweight and obese patients, I do use the
pemmican bars on a fat loading day or exercise day, taking into consideration some of the variables above.

On the raw vs cooked issue, my answer is going to surprise a lot of people; IT DEPENDS ON THE SOURCE OF THE MEAT OR FISH.

If the meat comes from
US Wellness Meats, it can actually be eaten raw or lightly cooked and pink or red inside. If commercially bought, or fast food, it has to be cooked, because of too much contact with people, bacteria,  and toxins.

Every time you overcook something you degrade it and change the molecular structure of it. Organic meat should be cooked to a 'medium or medium rare' at the most.  I advise people to cook meat by "browning" it on the outside, but red or pink in the inside.

A great way to prepare organic beef is to use olive oil, onions, peppers, garlic, and sea salt. Saute' for 5 minutes, with enough olive oil to cover the meat. Place the meat in the pan without cooking for about one hour, then sear the meat on both sides.  I love using the US Wellness

Question:
What is the difference between the cholesterol levels of your beef and the beef that I get in the market? I had high cholesterol levels and I had to cut out steak and red meat which I love. I am also a strongman competitor and I know the benefits of good protein daily. 


Jesse said that his LDL went down 50 points with this beef.

Dear Mark:

Great question!
There are no differences in cholesterol structure, but the difference is in the type of fats. Let me first explain by saying that a non-organic beef will have a lot more saturated fat and within those fats, a lot of toxins, which interfere with the way you metabolize those fats and how it affects your cholesterol.

The fats in organic meat are in different ratios because of what the animals consume and they are without toxins because they are not feed pesticides or hormones, which also affects your cholesterol.

People watch what they eat, and follow the saying, "you are what you eat",  but we need to pay attention to the diet of the animals we are consuming. Organic beef will influence your overall cholesterol up to a point, but not the LDL (the bad cholesterol). 

In my office I see people's cholesterol improve with organic beef, meaning that the total cholesterol might go up a little, but the good cholesterol goes way up (HDL) and the bad cholesterol (LDL) goes down. Now when they eat regular beef, cheeses or even chickens that are not organically raised their bad (LDL) cholesterol goes up.

The following are my general rules for keeping your cholesterol under control:

1-Consume only organic meats.
2-Avoid dairy and cheeses for 4 weeks.
3-Avoid sweets and juices (yes juices are sugar!)
4-Avoid carbohydrates, except sweet potatoes and whole brown rice, and only consume after physical activity.
5-Beer is a big elevator for cholesterol, so avoid beer.
6-Drink plenty of water.
7-Nuts will raise your good cholesterol, but try to eat organic nuts.
8-Elevated cholesterol can also indicate a hormonal problem, because in actuality cholesterol is not bad, it is one of your must important antioxidants and the mother of 90% of your hormones, so if your cholesterol is high it might indicate a hormonal imbalance.
9-Stress will elevate cholesterol because it is required for the formation of cortisone.
10-Over training will increase cholesterol, so it means that you need to make adjustments in your training schedule.
11-Check your cholesterol after four weeks see if you notice an improvement.

And use a toothpick to get those spinach chunks out of your teeth. But heed this warning: If you're a skinny vegetarian Mom-in-a-thong and raise your children under the "Monsanto funded health myth" that dictates, "Soy is good for kids" then forget it! Your child is gonna grow up despising you when he or she realizes how gullible you were - and how outta-whack their hormones and lives are as a result. You might as well start adding some birth control pills and a Jack-and-Coke-chaser to that artificial nipple...An infant who is fed exclusively soy formula receives the estrogen equivalent of about five birth control pills per day (Sally Fallon, Mary Enig. Well Being Journal, Vol. 16, No. 4, August 2007). Good ol' fashioned whey is a million times better. "Soy destroys."

Too bad most pets are fed better than children these days...

slow roasted shredded beef W/barbecue sauce.I had tried the regular a while back; however, I gave BBQ shredded a try with my recent order.

WOW!  It's wonderful.  We're big barbecue nuts here in N.C., (I personally don't like the NC barbecue - prefer Texas or Kansas City style).  I served the shredded beef w/barbecue sauce to a few guests and they were hooked!

Sizzling  Steaks with Roasted Garlic Pesto
tenderloin filet small
INGREDIENTS:

2 lbs
ribeyes or filets or NY strips
2 bulbs garlic
2 Tbsp. extra virgin olive oil
4 tsp. chopped fresh rosemary
2 Tbsp. grated Parmesan cheese

DIRECTIONS:

  • Preheat grill to medium.
  • For pesto, cut top from garlic bulb to expose cloves inside.
  • Drizzle with olive oil and sprinkle with rosemary.
  • Place on sheet of foil and seal on top.
  • Grill directly 30 minutes or until garlic is soft.
  • Squeeze cloves into a small bowl, add olive oil rosemary from foil, and stir in Parmesan cheese.
  • While garlic is grilling, season steaks with salt and pepper to taste and place on grill.
  • Cook 10-14 minutes for medium rare, turning once
  •  steak with garlic pesto before serving. Serves 2-4.
