The dog days of summer are quickly coming to an end.  We received over 6 inches of rain in Northeast Missouri this week, which has brought cooler weather and abundant pastures, witnessed in our grazing photos to the right and below. 
 
Did you know that this Wednesday is National Dog Day?  Just as many of our customers have evaluated their daily diets and reconsidered their nutritional sources, the same examination for their pet's diet is quite common. Often pets are regarded as members of a family. While we may have the luxury to decide between grass-fed, sustainably raised and organically grown, our pets rely on us as their sole provider for health and wellness. What an incredible responsibility and honor!  How humanely are we treating our own pets?

CELIAC DISEASE CASES QUADRUPLE IN U.S.

In the United States, celiac disease is four times more common now than it was in the 1950s, according to a study by researchers at the Mayo Clinic in Rochester, Minnesota. Celiac disease is an autoimmune digestive disorder caused by the gluten in wheat.

The Mayo Clinic study also found that people who didn't know they had celiac disease were nearly four times more likely than people without celiac disease to have died during the 45 years of follow-up.

"Some studies have suggested that for every person who has been diagnosed with celiac disease, there are likely 30 more who have it but are not diagnosed," senior author Dr. Joseph Murray noted in a statement from the Mayo Clinic.

"And given the nearly quadrupled mortality risk for silent celiac disease we have shown in our study, getting more patients and health professionals to consider the possibility of celiac disease is important," Murray added.

Celiac disease, results in symptoms such as digestive disorders, frequent diarrhea and extreme weight loss, is emerging as a substantial public health concern in the United States.

In an interview with Reuters Health, Dr. Alberto Rubio-Tapia, who was involved in the research, said, "The reasons for the increasing prevalence of celiac disease over time will need further study. The most likely explanation may be environmental."

One possible explanation is the hygiene hypothesis - the theory that the increasingly germ-free surroundings of modern life are actually contributing to an increase in allergies and asthma and abnormal immune system reactions.

Highly refined white flour in many processed foods may also contribute to this disorder as well. Additionally, because celiac disease is triggered by gluten, changes in gluten such as patterns of consumption, processing or preparation of gluten-containing foods might be involved.

Also, there is evidence that certain infections may increase the risk of celiac disease in genetically predisposed individuals.

Ultimately, Rubio-Tapia concluded, "the increasing prevalence of celiac disease over time may be the result of several of (these) factors acting together to cause damage of the intestine in genetically susceptible persons."

Researchers found that young people today are 4.5 times apt to have celiac disease than young people were in the 1950s, while those whose birth years matched the Warren AFB participants were four times more likely to have the disease.

Similar increases in cases of celiac disease have been reported in Europe.

MISSING NUTRIENTS KEY TO A GOOD NIGHT'S SLEEP

Recently I struggled with a bout of insomnia for several nights. As I tossed and turned and watched the clock tick by the hours for the third night in a row, I had plenty of time to think about sleep problems and what causes them. Being a wellness writer, I decided to find out what kinds of diet and lifestyle factors contribute to a good sound night's sleep, and what was causing my insomnia.

There are several factors. First of all, there are the obvious ones, which sometimes get overlooked. And then there are the not-so-obvious ones. Let's look at some of these...

While daily exercise helps sleep, exercising too close to bedtime (within two hours or so) will elevate the heartrate and metabolism and make it difficult to fall asleep. And if you are not getting adequate rest, your body does not make growth hormone which helps to build muscles, so you can be sabotaging your fitness by exercising too late at night.

Caffeine in coffee drinks, teas (even flavored ones), sports drinks, and GU or Shot Bloks can be sneaky culprits. Sometimes caffeine is inadvertently consumed too late at night, or sometimes our bodies just don't metabolize caffeine as quickly as we think it does.

Since caffeine has a 6-hour half life, 100mg in a cup of coffee is still significant 6 hours later, when there is 50 mg remaining in your body. And that means, six hours after that (twelve hours after consumption) you still have 25 mg of caffeine in your body. For the caffeine-sensitive person, even having coffee midmorning may be keeping you from feeling sleepy at 11pm.
 
So you see, caffeine can interfere with sleep, even if not consumed close to bedtime. Keep in mind too, the average cup of iced tea contains 70 mg or so of caffeine (almost as much as coffee) and most sodas contain about 50 mg of caffeine. Best to pay attention to caffeine intake and cut it off by noon and see if it makes a difference at night.

Dehydration-something that occurs more frequently in the summer than we probably realize, can also keep you awake. On a warm summer day, replacing the fluids that are lost in sweat is key. If you are outside exercising, remember to drink every 15 minutes and to drink about twice as much-or more-than you regularly do.

Going for that cold beer or sipping a margarita after strenuous activity outside sounds tempting, but unless you have replaced fluids lost from sweat, and then replaced the fluids lost from the  alcohol, you have created a double whammy that will dehydrate your body quickly! And don't forget...

WHEN A "TUB OF LARD" IS A GOOD THING

Remember the days when everything was cooked with good, old-fashioned butter, beef tallow or lard?

My grandmother cooked with lard her whole life. Most people did... until the government told everybody that animal fat caused heart disease. Then manufacturers introduced substitutes such as shortening and margarine.

How do these stack up? More like plastic than food. Manufacturers heat assorted vegetable oils to extremely high temperatures to change their molecular structure. Then, they add nickel or aluminum and hydrogen atoms to make it a solid mass. Of course, then you need deodorants and dyes to mask the awful odor and ugly gray color. Plus some chemicals and preservatives to prevent this rancid oil from rotting.

The fake stuff has proven to be worse than the real thing! They're bad for you, and they're loaded with trans fatty acids, the true fat demons of our time. Trans fats are linked to heart disease, heart attacks, strokes, cancer and more. ,   

You see, your body needs animal fat. It uses it for fuel and it helps your body absorb important nutrients. And it's good for your heart. In fact, your heart is covered with a layer of "animal fat" that it uses as an energy booster during times of stress.  

Just look at our native cultures. They put animal fats at the center of their diet and show no trace of heart attacks or heart disease. The Inuits of Alaska eat a diet that is over 80% animal fat. And before they were exposed to the typical Western diet, they had no history of heart disease.

The Native American Indians also had a diet high in saturated fat. Fat was so important to their diets that they often selectively hunted for animals that had more fat. They had remarkably good health without any signs of heart disease.

Real lard is a saturated fat that is a naturally hydrogenated, solid fat. It's simply rendered pork fat. Beef tallow is a similar product and can be used the same way. Like what our ancestors used.

Here's how lard stacks up to other fats. It has more of the "good" monounsaturated fat than butter and flaxseed oil. And zero trans fats, unlike margarine and shortening.

I tell my patients they should get about 50% of their fat intake from saturated fat. But it's important that you get it from the best sources. Look for meat and animal products that come from organic, grass-fed, and free-range animals. Wild game is also a great source.  

If you want to try lard, or beef tallow you should get it from natural sources. But beware - the lard sold in most grocery stores is typically hydrogenated to give it a longer shelf life. It's not the real stuff. One rule of thumb: If it's not refrigerated, you don't want it.  

The best kind of lard is leaf lard that comes from the fat around the kidneys of a hog.  Fat from the belly and back will also work. But real lard is hard to get a hold of these days. Although I did read about a small farm in upstate NY called the Flying Pigs Farm that makes it. You can also check your local specialty food stores.

But the best way to get it is to make it yourself, which is what my grandmother did. You can get some good quality pork fat that comes from humanely raised pigs from your local butcher or independent pig farmers.

Here's an easy way to make it - cut beef suet into little chunks and cook very slowly over a low heat. Be careful not to burn it. Heat until the fat melts and only crispy bits are left. Strain it and then put it in a container. Keep it refrigerated and it will last a long time.

And don't forget to include other healthy fats like polyunsaturated (omega-3s) and monounsaturated fats in your diet. Get them from grass fed meats, wild salmon, olive oil, and nuts. Skip the processed foods-- margarine, and Crisco!

HOW TO BREAK THE SUGAR ADDICTION

It's been seven years since I've had a soda. But there was a time when I was ravenous for Mountain Dew. It was cold, it was fizzy, and it tasted great.

Whether I was slaving away in the lab, poring over science journals in the library, or even teaching organic chemistry, nothing stopped me from drinking it. I was hooked. Little did I know, I had developed a biochemical addiction to the sugar in Mountain Dew that could have led me to an early grave.

Do you have an addiction to sugary sodas? If so, pay careful attention. I'll reveal what you need to do to save your health.

In a study comparing the addictive properties of sweeteners, sugar proved more addictive than cocaine.

When consumed, sugar increases serotonin levels within the brain. This increases the production of endorphins. Like drugs, these brain chemicals trigger opioid receptors, thereby eliciting the sensation of happiness. This artificial increase in serotonin levels causes the body to down-regulate its natural production and release of serotonin.

Addiction begins to creep in. Serotonin is responsible for controlling mood and appetite. Without serotonin, a person gets depressed and craves more sugar. This forges an emotional bond between happiness and sugar (or soda sweetened with sugar). Sugar addicts become dependent on it to increase serotonin and therefore make them feel happy. That explains why, no matter what I was doing, I would drop it to get my Mountain Dew fix! By leveraging this biochemical addiction, soda manufacturers are making a fortune.

The problem with sugar addiction is that it leads to obesity and Type II diabetes. Not only was I an honorary member of The Fat Cow Hall of Fame (I weighed 205 lbs with 30 percent body fat; off soda today, I'm 170 lbs with 10 percent body fat), I was boosting my blood sugar to dangerous levels. One soda per day increases your risk of diabetes by 85 percent, which can reduce your lifespan by 11 to 20 years.

The addiction can be totally overcome in about three weeks. To do it, you need plenty of exercise and sunshine, along with L-tryptophan from grass-fed beef and whey isolate. Natural sweeteners like stevia and agave can help you ease off the soda (use them to make a natural soda from sparkling water and lime), as can herbal teas (like Yerba Mate).

Hello! I am a type ll diabetic and I am having problems regulating my blood sugar.

Everything seems to turn to sugar in my system and I am becoming unable to control my BG's even with Levemir insulin.

Do you have any advice about how to go about fixing this naturally?

Thanks for any help you can give me. My doctor is perplexed as well. He believes in using supplements/natural foods as well.

Dear R.F.,

I don't know what your diet is like or what kind of levels you are getting, but sugars levels are not perplexing; unless, you have other secondary problems or conditions. If you do have diabetes type two, then these suggestions will help you control it:

1.  check for food allergies
2.  no cheeses,no dairy, and only dairy to allow is organic butter; no grains, including rice, wheat, corn oats etc
3.  no soy
4.  no fruit juices of any kind, at all
5.  only fruits allow avocados, papayas, grapefruit, tomatoes, prunes, and berries but with a protein combination
6.  all nuts and vegetables are ok except peanuts
7.  organic red meat, fish, fowl, seafood are ok
8.  beans are ok, but must check for increase in sugars
9.  sweet potatoes twice a week
10.  water is the only choice for drinking
11.  once your sugars are under control--and it is going to take you fourteen days-- then we start adding other foods, including cheese, etc.

Start checking your sugars an hour after eating and let us know.
I can discuss supplements after you make changes to your diet.

White Sangria-Poached Salmon

White Sangria-Poached Salmon with Summer Fruit Salad

Ingredients:
  • 4 six ounce Salmon Fillets
  • 2 cups white wine
  • 3/4 cup sparkling lemonade
  • 1 lemon, sliced thin
  • 1 orange, sliced thin
  • 1 large peach, pitted and sliced thin
  • 2 plums, pitted and sliced thin
  • 1/2 cup blueberries
  • 1 cup strawberries
  • 1/2 pint raspberries
Preparation:
  • Combine wine, lemonade, lemon and orange in a 10" skillet.  Bring to a boil, then reduce heat to simmer.

  • Place salmon fillets in skillet, cover, and poach for 15 minute or until the fish flakes when tested.  

  • Remove salmon from skillet and place onto a serving platter.  

  • Carefully combine remaining ingredients in a mixing bowl.  Distribute fruit salad around the salmon and serve. 
Serves 4.

The minimum is required since we have built the cost of shipping into the price of the product.  You will only see a nominal handling at checkout.

The issue is the 20 pound bulk chicken and turkeys  originate from separate cold storage center where those products are produced. It is not efficient to ship one package of beef as a stand alone item when the balance of the order originates 400 miles away.

The shopping cart will keep track and remind you if you are under the 7 pound limit for a combination of beef, lamb, pork, raw cheese, butter, goat, shrimp, soap and single honey bottle purchases. A Red font will appear under the shopping cart if you are under the minimum price or pound requirements.
