EATING MEAT DOES NOT RAISE CANCER RISK IN OLDER WOMEN
Eating red or white meat, including meat cooked at high temperatures, does not increase the risk of breast cancer in postmenopausal women, according to a large study conducted by researchers at Albert Einstein College of Medicine of Yeshiva University.

A number of previous studies have found that eating red meat or meat cooked at high temperatures increases the risk of breast cancer. (High temperatures caused by grilling, barbecuing or pan-frying produce high amounts of heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs) in meat; HCAs and PAHs are mutagens (chemicals capable of causing mutations in DNA) that can cause breast tumors in laboratory animals.)

But a link between meat in the diet and breast cancer in women hasn't been established. "Previous epidemiologic studies in humans looking at the amount of meat in the diet and estimated intakes of HCAs and PAHs in relation to breast cancer risk have yielded inconsistent results," says lead author Geoffrey C. Kabat, Ph.D., M.S., senior epidemiologist in the department of epidemiology and population health at Einstein.

To clarify this issue, Dr. Kabat and his colleagues analyzed data on 120,755 postmenopausal women who participated in the NIH-AARP Diet and Health Study. When the women enrolled in the study (between 1995 and 1996), they gave detailed information on what types of food they ate and how often they ate certain foods. In addition, they provided information on meat-preparation methods.

Over the next eight years, approximately three percent, or 3,818, of the women developed breast cancer. The researchers found no evidence that the amount of meat consumed, meat-cooking methods used, or meat-mutagen intake was associated with an increased risk for breast cancer. Reported meat intake included steak, hamburger, chicken, pork, processed meat and meat cooked at high temperatures.

The study also found that consumption of meat or meat cooked at high temperatures, through grilling and oven-broiling, did not increase breast cancer rates in subgroups including obese women, those who did not have children, who were consumers of alcohol, who were smokers, who used menopausal hormone therapy, who had low levels of physical activity, or had a low intake of fruits or vegetables.

IS YOUR SPORTS DRINK HELPING OR HINDERING YOUR PERFORMANCE?

Athletes everywhere pick up sports drinks to quench their thirst and replenish carbohydrates. Do they really work? Do energy and sports drinks help performance or do they just add empty calories?

A recent scientifically formulated new sports drink called "Beyond Hydration" water may actually be the only drink that does. However the leading sports drinks on the market may actually be detrimental to athletic performance.

Expensive and highly visible advertising campaigns, and celebrity athlete spokespersons give many people the impression that  drinks like Gatorade and Red Bull are healthy and essential during or after a workout to replace energy, lost electrolytes, carbohydrates and fluids.

Although simple carbohydrates are helpful for athletes engaging in high-intensity exercise; are sports drinks effective, or even appropriate, for the average gym member or weekend warrior? Studies seem to be split on the matter.

In one study, researchers prepared beverages containing glucose, maltodextrin or neither, so that they tasted identical, and gave them to athletes, who rinsed the drinks around in their mouths before spitting them out during exercise. Despite not reaping the energizing effects of the carbohydrates in the drinks, the rinsing of the simple sugar mixes were shown to "significantly reduce the time to complete the cycle time trial," while the placebo drinks had no such effect. The data was so impressive that the researchers concluded "much of the benefit from carbohydrate in sports drinks is provided by signaling directly from mouth to brain rather than providing energy for the working muscle."

Another study found that citric acid, commonly found in sports drinks, ate away at the enamel coating on teeth. As a result, the drinks could easily leak into the bone-like material underneath, causing a weakening and softening of the tooth that could result in severe tooth damage and even tooth loss if left untreated.

Sports drinks are up to 30 times more erosive to your teeth than water. As this recent study pointed out, brushing your teeth does not help because citric acid in the sports drink will softens tooth enamel so much it could be damaged just by brushing.

The leading brands of sports drinks on the market typically contain as much as two-thirds the sugar of sodas and more sodium. They also often contain high-fructose corn syrup (HFCS), artificial flavors, and food coloring, none of which belong in your body,

THE HIDDEN DANGERS OF COOKING

Before you cook that chicken breast to a perfect golden brown or caramelize those onions to add to your favorite dish, you may want to heed the latest research.
Browning your food - the cooking term is "caramelizing" - occurs when sugar molecules attach to protein.
Though your taste buds are enjoying the party, the rest of your body is paying the price.

When the sugar attaches to the protein, a series of other reactions occur called glycation that causes proteins to stick together. When proteins stick together, it is called "cross linking". The official term for these cross-linked proteins is Advanced Glycation End products, or AGEs.

When these "sticky proteins," or AGEs, build up, that's when the real trouble begins. AGEs can gather in any number of tissues in the body, and the basic result is that the tissue gets "stiffer". When tissues get stiffer, they don't work as they should.

AGEs have been associated with a number of diseases such as diabetes, cardiovascular disease, metabolic syndrome, arthritis, Alzheimer's disease, and cancer.

Preventing the build up of AGEs may be an important factor in preventing many age-related diseases. Here are a few things you can do:


Avoid a diet heavy in foods that have been heated for prolonged periods of time, particularly meats, fats, and broiled foods.  That doesn't mean you shouldn't eat quality meat, just don't overcook and prevent browning if possible. Cooking with water prevents caramelizing - like steaming or boiling.


AGEs can be inhaled through cigarette smoke.  As if you needed another reason to quit!

Here are some supplements that have been shown to slow down AGE formation:

o    Carnosine - An excellent overall antioxidant, carnosine has been shown to prevent cross linking.  Carnosine levels drop dramatically when we age, so supplementation is a good idea, 100 mg - 200 mg a day.

o    Pyridoxine (vitamin B6) - Has been shown to reduce AGE formation. Vitamin B6 is also a good antioxidant and helps with metabolism of carbohydrates. Take 300 mg to 500 mg a day.

o    Thiamine (vitamin B1) - Another good substance to slow down AGE formation. An important part of carbohydrate metabolism, vitamin B1 is also known to reduce the risk of cardiovascular disease. Take 1.5 mg a day.

An important note, high blood sugar levels can greatly increase cross linking and AGEs. So avoid a high sugar diet, or your sweet tooth may cost you more than an extra trip to the dentist.

DEFY AGING DNA THE EASY WAY

Telomerase acts as a shield for your genetic blue print - DNA (deoxyribonucleic acid).  It protects it from getting shorter and older.  The more you have, the healthier and stronger you are.

I don't have enough details, but the must common reasons for abdominal fat are high carb diet, stressed life-style, back injuries, low DHEA, and low thyroid.  Based on what you are telling me it sounds like you guys do consume a high carbohydrate diet, with little amount of good fats and no exercise.

About your back, I don't know what happened but it will make a huge difference if you start rehabing it if you can, with exercises.

I am really eager to lose body fat now that summer is here and I want to put on a bikini without feeling self conscious.  Should I just do an hour of cardio of day and increase the amount each week until I hit my goal?

Absolutely not!  I get a question like yours very often so there must be some consistent misconceptions out there that still persist.  I interact with many thousands of people each year as a consultant and review the training and nutrition histories in detail.  100% of the profiles I review that involve excessive cardio are associated with a lack of progress.

The best combination for accelerating fat loss- focus on the word accelerating!, would be a combination of weight training and interval sprints.  I have taken many female clients to previously un-reached levels of success with proven tactics.  Looking good in a bikini requires a very low body fat for women since there is nowhere to hide trouble spots.  It is not uncommon for my female clients to use 2% of their body fat per month for an extended period of time pending on the end goal.  This can translate to a 10-20 lb permanent loss in 8 weeks.

The design of both the interval sprints and weight training routines are critical to match the needs of the client.  The base fitness level is very important as I do not expect a novice to do the same volume or intensity of a more experienced trainee. 

Interval Sprints for Rapid Fat Loss

An example of interval sprints could be going as fast as you can for 10 sec on a stationary bike followed by a 30 sec jog pace.  Repeating this interval for 20 minutes is much more productive than traditional steady state cardio for many reasons that Dr. Serrano will discuss in the video clip.  I have developed several hundred protocols for intervals involving different modes of exercise, timing, tension, incline etc.  Refinements involving all of these factors can be the difference between achieving average and great fat loss results.

Previous columns have expanded on the importance of weight training in the fat loss equation.  Many females avoid weight training or use the wrong tactics to achieve their goals.  These sessions should not be a walk in the park, rather the greater the intensity the faster the progress, in my 10 years of experience.  Progressively heavier weights must be used while packing more work into gradually less time.  Note this type of training does not result in an undesired increase of lean muscle mass.  Weight training not only burns a great deal of calories, but also supports an accelerated metabolic rate for many hours following the exercise session.

INGREDIENTS:
  • 2 pounds ground beef
  • 1/4 teaspoon seasoning salt
  • 1/3 cup crumbled blue cheese
  • 3 ounces cream cheese -- softened
  • 1 tablespoon country-style Dijon mustard
  • 4 onion buns
  • 1 1/2 cup fresh mushrooms -- sliced 1/4-inch
  • 2 medium onions -- sliced 1/8-inch
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon Worcestershire sauce or All Natural US Wellness BBQ Sauce
  • 4 slices ripe tomato
DIRECTIONS:
  • In medium bowl stir together ground beef, 1/4 teaspoon salt and 1/4 teaspoon pepper. Form into large 1/4-inch thick patties (you need 2 patties per burger)
  • In small bowl stir together blue cheese, cream cheese and mustard. Place about 2 tablespoons cheese mixture on top of each of half the patties. Top each with remaining meat patty. Press around edges to seal.
  • Place hamburgers in 10-inch skillet. Cook over medium heat, turning once, until desired doneness (12 to 15 minutes for medium). Place hamburgers on buns.
  • In same skillet with drippings place mushrooms and onions; add 1/4 teaspoon salt, 1/4 teaspoon pepper and Worcestershire sauce. Cook over medium high heat, stirring occasionally, until tender (4 to 5 minutes).
  • Meanwhile, place tomato slice on each hamburger; top with fried mushrooms and onions.
