Happy New Year!
We hope you are enjoying the new year as much as we are!  It has been a very busy 2011 so far here at US Wellness Meats, and we are looking forward to another year of good health.

The snow has melted here, and cattle have been enjoying clear, cool and sunny days.  See for yourself in our farm photos below.  We don't usually get much sunshine in Northeast Missouri in January, so we are enjoying it as well!

We have been following S 510 - The Food Safety Modernization Act for about a year now, and President Obama signed it into law this past week.  However, they have not decided where the money will come from to fund the $1.4 billion project.  We are still hopeful that this sweeping piece of legislation will see some changes before going into full effect.  The Farm-To-Consumer Legal Defense Fund is an excellent source to track agricultural policies and legislation such as this one.

BreakingNewsGreen TeaProtective Properties of Green Tea Uncovered

Regularly drinking green tea could protect the brain against developing Alzheimer's and other forms of dementia, according to latest research by scientists at Newcastle University.

The study, published in the academic journal Phytomedicine, also suggests this ancient Chinese remedy could play a vital role in protecting the body against cancer.

Led by Dr. Ed Okello, the Newcastle team wanted to know if the protective properties of green tea - which have previously been shown to be present in the undigested, freshly brewed form of the drink - were still active once the tea had been digested.

Digestion is a vital process which provides our bodies with the nutrients we need to survive. But, says Dr. Okello, it also means that just because the food we put into our mouths is generally accepted to contain health-boosting properties, we can't assume these compounds will ever be absorbed by the body.

"What was really exciting about this study was that we found when green tea is digested by enzymes in the gut, the resulting chemicals are actually more effective against key triggers of Alzheimer's development than the undigested form of the tea," explains Dr. Okello, based in the School of Agriculture, Food and Rural Development at Newcastle University.

"In addition to this, we also found the digested compounds had anti-cancer properties, significantly slowing down the growth of the tumor cells which we were using in our experiments."

Two compounds are known to play a significant role in the development of Alzheimer's disease - hydrogen peroxide and a protein known as beta-amyloid.

Previous studies have shown that compounds known as polyphenols, present in black and green tea, possess neuroprotective properties, binding with the toxic compounds and protecting the brain cells.  When ingested, the polyphenols are broken down to produce a mix of compounds and it was these the Newcastle team tested in their latest research.

"It's one of the reasons why we have to be so careful when we make claims about the health benefits of various foods and supplements," explains Dr. Okello.

"There are certain chemicals we know to be beneficial and we can identify foods which are rich in them but what happens during the digestion process is crucial to whether these foods are actually doing us any good."

Carrying out the experiments in the lab using a tumor cell model, they exposed the cells to varying concentrations of the different toxins and the digested green tea compounds.

"Green tea has been used in Traditional Chinese medicine for centuries and what we have here provides the scientific evidence why it may be effective against some of the key diseases we face today."

Dr. Okello adds: "There are obviously many factors which together have an influence on diseases such as cancer and dementia - a good diet, plenty of exercise and a healthy lifestyle are all important."

Here's an interesting observation: Americans spend more than $11 billion dollars on bottled water which means we are actually spending MORE per gallon on bottled water than we do on gasoline. Why - when bottled water costs about 1900 times the price of tap water?

Well, most consumers think that drinking bottled water is safer and cleaner than drinking tap water. However, did you know that most municipal tap water, even though it is far from pure, must follow stricter purity standards than the bottled water industry?

Contrary to popular belief, bottled water is loosely regulated and may be just as bad or worse than regular tap water. Bottled water has actually been recalled several times in the past few years, due to contamination by arsenic, bromate, cleaning compounds, mold, and bacteria.

While the picture on the bottle water label may show a crystal clear spring from some ancient geyser, your water may very well have come from a well in an industrial facility parking lot. Obviously bottled water is no assurance of purity, cleanliness or safety. Before You Take a Drug

Dear Health-Conscious Reader,

Imagine a mother taking her teenage son to a doctor for ADHD treatment. She trusts his prescription will help him get along better in school. Improve his focus. Function better in the world.

But instead of getting relief from his symptoms after taking the drugs, the unthinkable happens...

He suffers a sudden heart attack.

This tragedy is happening right now. Children - with no previous heart conditions - are suddenly dropping dead after taking ADHD drugs like Ritalin.

A study published by the National Institute of Mental Health (NIMH) found that healthy kids who take Ritalin have a 500% greater risk of sudden death. These aren't kids with pre-existing heart conditions. The results would have been worse if they were included.(1)

Another study published recently in the American Journal of Psychiatry found that kids taking stimulants like Ritalin were more than four times as likely to suffer sudden death.(2)
 
Ritalin is just one of several drugs that have caused heart attacks in recent years. Drugs like Avandia, Baycol, Bextra and Vioxx all have resulted in tens of thousands of deaths from heart attacks. It's the ultimate reason to be suspicious of these new drugs.

But let's just take Ritalin, for example. It's a stimulant - and acts exactly like amphetamines, such as crystal meth and cocaine. That means it causes the heart to beat faster. But a fast heartbeat can knock plaque from arteries and block blood flow. And that can lead to sudden heart attack.

Then there are Cox-2 inhibitors, like Vioxx and Bextra. They block the Cox-2 enzyme from creating protective fatty acids your body needs. Blocking the enzyme also can cause clotting - which can trigger a heart attack.

And then there's the case of statins. They've been found to decrease levels of CoQ10 in the blood by 40 percent.(3) But CoQ10 is essential for the function of every organ - especially your heart. It fights free radicals in cells and regulates the rhythm of your heart rate. Simply put, they lower your CoQ10 levels, they higher your risk of dying.

Drugs treat symptoms, but don't cure underlying problems. Putting these foreign substances in your body upsets its natural function. And that can lead to unintended consequences - like sudden heart attacks.  The bottom line here is that you need a strong, powerful, energetic heart. Try to avoid prescription drugs, and follow these three simple tips:

1. Challenge Your Heart - Hours of "cardio" will only shrink your heart. To make it bigger and stronger, challenge your heart with short-duration, high-intensity exertion, like I show you in my PACE program. This will increase your reserve capacity - the heart's ability to pump more blood faster in times of stress - and grow your heart.

2. Feed Your Heart - Get plenty of CoQ10. It's a super-nutrient for your whole body, and a source of energy for your heart. Grass-fed beef, eggs and cod liver oil are great CoQ10 food sources. Or you can supplement. I recommend taking 50 mg of the "ubiquinol" form of CoQ10.

3. Defend Your Heart - Eat the kinds of foods nature intended for us. That means a variety of proteins, healthy fats, fruits and veggies. Antioxidant-packed fruits and veggies are blueberries, raisins, and prunes, kale, spinach and brussels sprouts. Stay away from processed grains and sugars. Eat this way and your heart will last a very long time.

First and foremost, start eating more fat.  I'm not talking about the artery-butchering, belly-inflating trans fats.  I'm referring to healthy, naturally occurring fats in the form of grass-fed beef, seeds, nuts, butter, avocados, eggs, coconut oil, and fish.

Healthy fats help your body better absorb lifesaving supplements.  Without healthy fats, many nutrients will pass right through you, without eliciting any benefits!  As more motivation to eat healthy fat, keep in mind that it will also help you live slim and thin.  Yes, this goes against traditional advice.

Traditionally, a low-fat, high-carbohydrate diet has been recommended.  This is the foundation of the government-mandated food pyramid.  This low-fat approach is based on simple math.  Fat has about twice as many calories per gram as carbohydrates and protein.  Therefore, the knee-jerk reaction is to avoid the calorically rich food and instead stuff your face with the lower-calorie carbohydrates.  Regardless of the decreased calories, applying the theory has proven disastrous.

Carbohydrates raise blood sugar, low calorie or not.  This, in turn, causes the pancreas to produce and spike the "Oh no, please don't take your shirt off" hormone insulin.  This tells your body to store, store, store, and your brain to eat, eat, eat.  Carbohydrate-laden diets have single-handedly expanded America's waistline to epidemic proportions.  No surprise: math isn't the best measure of a food's effect on the body - biochemistry is...

What are your thoughts on spirulina?  Royal jelly?  Also, is there a big health difference between raw grass fed organic butter and pasteurized organic grass fed butter?

Because the farm I used to go to used to sell raw butter but they don't anymore, so would you recommend the pasteurized version?

Dear George,

I would love to have raw butter also, and we do at my house because we make our own.  Yes, it is better but it can't be done legally because of the ridiculous law, but talk to your close farmers and you might still be able to get it for "animal use" which we do with my puppies.
 
Spirulina has not impressed me much even though I have seen some research on it.  My patients don't think it makes a difference, but the royal jelly does, but they used a lot and it was raw.

Advanced Yet Simple Rapid Fat Loss Exercise Strategies

I ate so badly from Thanksgiving through the holidays that I should have more stored energy than a bear hibernating for the winter.  Now I need to get things in gear to be ready for an April vacation with a 25-30 lb loss of body fat.  Problem is, I am overwhelmed with what to do at this point to get things going.  I have other plans that I have used, but they never seem to get me all the way to my goals. Start by asking yourself an important question!  How much progress did you really make last year?  If the answer is less progress than you had in mind then it is time to change the strategy or you can expect the same lack luster results.  Luckily for you I know exactly what to do to help you reach your goals as your situation reflects that of numerous clients that I have helped.  There is no time to waste.  Do not let details slow down your action- two huge steps to take to stop the bleeding right now!  Get active by exercising and get rid of the junk food in the diet.  It is very easy for people to put off New Year goals for various excuses, such as being busy with work or cold weather.  This is a huge mistake as body fat piles on faster the longer bad habits are in place due to worsening hormonal and metabolic conditions that are self inflicted.

recipeLazy Day Beef & Vegetable Soup

Lazy Day SoupIngredients:
  • 2-1/2 lbs stew beef
  • 2 cans (28 oz) beef broth
  • 1 cup water 
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups frozen mixed vegetables
  • 1 can (15 oz) chickpeas, drained 
  • 1 can (14-1/2 oz) diced tomatoes with garlic and onion, undrained 
  • 1 teaspoon dried Italian seasoning, crushed 
  • 1 cup uncooked ditalini or other small pasta
  • Shredded Mozzarella cheese
Directions:
  1. Combine beef, broth, chickpeas, tomatoes, water, salt, Italian seasoning and pepper in 4-1/2 to 5-1/2-quart slow cooker; mix well.
     
  2. Cover and cook on HIGH 5 hours, or on LOW 8 hours. (No stirring is necessary during cooking.)
     
  3. Stir in mixed vegetables and pasta. Continue cooking, covered, 1 hour or until beef and pasta are tender. Stir well before serving. Serve with cheese.
     
Yield: 6-8 servings
