Here is a story very close to the hearts of many Missouri farmers.  In 2011 our state suffered from some of the worst flooding in years, especially in the Northwest and Southeast corners of the state.  One battle we are facing in Southeast Missouri is the rebuilding of the Birds Point levee - the Corps of Engineers intentionally blew the levee causing floodwaters to fill the spillway in order to save the town of Cairo, IL on the other side.  Now, residents are fighting to get their levee rebuilt in order to save their livelihoods, as well as thousands of acres of prime farmground, however they are having trouble getting it rebuilt to the proper levels.  Watch this video and help us spread the word to help our neighbors protect their homes and farms.

Back this week - high demand items such as 85% Lean Beef Patties, Beef Tallow, Suet, Pork Roasts, Pork Bacon and Lamb Organs all restocked this week, our apologies for the extended delays.

Autumn Regards,

John, Lee Ann, Megan, Tressa, Jennifer, and Amanda on behalf of the farm families of US Wellness Meats.

Proper Protein Intake Crucial for Moderating Energy Intake, Keeping Obesity at Bay

Obesity is a growing problem worldwide, but proper protein consumption can help keep it at bay, according to a paper published Oct. 12 in the online journal PLoS ONE.

Researchers found that, when subjects were fed a 10% protein diet, they consumed 12% more energy over four days than they did on a 15% protein diet. Moreover, 70% of the increased energy intake on the lower protein diet was attributed to snacking. When the protein content was further increased to 25%, however, the researchers observed no change in behavior relative to the 15% protein diet.

It had previously been suggested that protein content plays an important role in determining overall energy intake, and thus affects obesity, but until this study, experimental verification had been lacking. To test the hypothesis, the researchers tested 16 female and 6 male participants, all lean and in good health. The subjects spent four days on each of the three diets, which were made as similar as possible in factors such as palatability, availability, variety, and appearance, and their intake was monitored.

According to Dr. Alison Gosby, "the results show that humans have a particularly strong appetite for protein, and when the proportion of protein in the diet is low this appetite can drive excess energy intake. Our findings have considerable implications for bodyweight management in the current nutritional environment, where foods rich in fat and carbohydrate are cheap, palatable and available to an extent unprecedented in our history."

This work was led by Dr. Alison Gosby and Professor Stephen Simpson of the University of Sydney, Australia.

Sorry Vegetarians...

By: Al Sears, MD

Dear Health-Conscious Reader,

People still mistakenly believe that eating a lot of protein from meat hurts your bones.

The reason is that some studies found that people would lose lots of calcium through their urine after eating protein.

Scientists have speculated for decades on the reason for all that calcium leaving people's bodies. Way back in 1968, a piece published in The Lancet theorized that you use calcium from bones to counter the acidity produced when you break down the meat you eat when you digest it.

And the theory stuck.

But just speculating it was "because of meat" doesn't make it true.

In fact, a newer analysis by the Journal of Nutrition says plainly:

"No convincing data have been published showing that a high protein diet, using complex proteins for prolonged periods of time under strictly controlled dietary conditions, causes calcium loss.

"Dietary proteins other than red meat, such as milk and cheese... do not cause calcium loss in controlled studies in humans. The generalization that 'protein' causes calcium loss or may be a risk factor for osteoporosis, without specifying the type and source of protein, is therefore incorrect."(1)

And listen to this... I love this study. I read it in the American Journal of Clinical Nutrition.

These guys gave people a pound of red meat every day for four months. I'd love to have been in this study. Point is, urinary calcium did not change.(2)

Yet many "experts" still warn that a high-protein way of eating will cause osteoporosis. And vegetarians have grabbed on to this as a reason not to eat meat.

But not only is the meat-calcium theory a myth, it turns out the opposite is true about bone strength and vegetarianism...

Is This Toxin in Your Breakfast?

By: Kelley Herring

A bowl of whole grain cereal...a piece of a wheat toast...and a cup of coffee.

That might sound like a typical carb-rich American breakfast. And you probably already know that a high-carbohydrate diet can add pounds to your middle. But research shows that these foods could also increase your risk of cancer, heart disease and Alzheimer's.

That's because there is known toxin - called acrylamide - which is typically formed when high-carbohydrate foods are cooked at high temperature (fried, roasted or baked). In a moment, you'll discover just how harmful this substance can be.

And you might be surprised at just how prevalent it is. In fact, the Food and Drug Administration recently published its latest research on the acrylamide content of common foods. Here are those that topped the list:

  • French Fries (made in restaurants)
  • French Fries (oven baked)
  • Potato Chips
  • Breakfast Cereals
  • Cookies
  • Brewed Coffee
  • Toast
  • Pies and Cakes
  • Crackers
  • Soft Bread
  • Chile con Carne
  • Corn Snacks
  • Popcorn
  • Pretzels
  • Pizza
  • Burrito/Tostada
  • Peanut Butter
  • Breaded Chicken
  • Bagels
  • Soup Mix

You might be curious how coffee got on the list, since the drink itself doesn't have any carbohydrates. The acrylamide is formed when the beans are roasted at high temperature.

So just how serious is acrylamide exposure?

Eric Seranno
Hello Dr. Serrano,

My seven year old son was recently diagnosed with ADHD and I have heard a lot about the effects of diet on ADD/ADHD.  What are your thoughts on this?  and what should I do to improve his diet and will this help alleviate some of the symptoms?  Are there certain foods I should start removing first?

Thank you in advance,

Beth T.
______________________________________________________

Dear Beth,

I love your question and the answer is a big yes, but I am sorry to tell you ADHD is bigger than just that.  There are so many compounding issues for ADHD and I am going to point out some of these components:

  1. New doctors taught to diagnose and prescribe medication for ADHD
  2. Teachers expect kids not to move or do things in the classroom and at the same time we as parents took the power of properly correcting our children in the classroom by law suit
  3. TV and computer
  4. Video games
  5. No physical education classes
  6. Food coloring
  7. Poor parenting
  8. DIET
  9. Processing of foods
  10. FOOD ALLERGIES

In my practice 90% of cases I solved by only using numbers 8 & 10, or diet and food allergy elimination, and if those two do not do the job then I will start looking at the rest.

I only use medication in extreme conditions in which anoxia of the brain secondary to abuse or other organic reasons have been diagnosed.

I try to combine the best of both worlds in medicine, but each case is unique and for that reason I can't just say diet is the only reason but it is the biggest reason.

I will start by getting your son tested for food allergies, and doing an elimination diet.  The top four things I would eliminate are:

  1. Sweets
  2. Wheat
  3. Dairy
  4. Anything with coloring in it, including juices and meats

I would also pack his lunch because his school is not going to cooperate with you.  Also make sure he takes a good source of fish oils, I recommend Alpha Omega-3 but your son is too small to swallow big pills so I would use Cod Liver Oil by Barleans.

I would also start adding probiotics.  The only two I use are chewables (www.klaire.com) or by calling (888) 488-2488 using code 614; or Flora 20/14 by Innate Response by calling (800) 634-6342 and use code SER030.

I hope these suggestions help you and your son.

P.S - Make sure he eats organic butter which is the only dairy I want him to have.

Good Luck,

Dr. Serrano

Burn 10-20 lbs of Fat in 30 Days While Earning the Perfect Set of Arms

By: Scott Mendelson

Scott,

I met one of your clients in the gym who is in great shape, he has the body everyone wants and he raves about your programs and he suggested I talk to you ASAP!  I want to build up my arms while losing body fat and not sure what to do. The goal is to drop ten lbs of flab in 30 days, but I need a simple nutrition plan to follow that I know will work- what do you suggest?

Jim
Denver, CO

____________________________________________

Jim,

I can help you achieve those goals in an aggressive time period to make sure your guns are ready to show off ASAP.  You asked for a simple yet effective nutrition plan and the Zero Tolerance Fat Loss Plan is the ticket to 10-20 lbs of fat loss in 30 days.  I suggest an intense approach working towards short term goals, which will require effort.  However, after reaching your fat loss goals with ZTP, maintaining the low level of body fat will be much easier and allow for more freedom with the diet.  Otherwise the half hearted approach that many people take just never gets them anywhere.

Work Hard and Smart - Time for Strategic Change

It is time to incorporate strategic change.  We are all creatures of habit, but repeating tactics that have not produced results is madness when expecting a different result.  My job is to match clients with programs to fit their specific needs.  A motivated client with the right plan is an unstoppable force of success.  The key is consistently working hard and smart to achieve a goal.  Very often I run across new clients who have been working hard but using the wrong methods, as a result their progress has not met their expectations.  Arming you with the right nutrition, training, and supplement plan will unlock your full potential.

Talking Muscle Heads

99% of trainees keep the palm up when doing curls and the palms neutral when performing triceps exercises which neglects other heads of the muscle that must be stimulated for excellent development.  The routine below uses a strategic strip set to correct common weaknesses first, which pre-fatigues the muscles allowing for the stronger heads to also undergo excellent fiber stimulation. There is more to developmental balance that what one would think.

Weak muscle heads cause the nervous system to shut down growth of stronger heads to avoid injury.  The nervous system plays a huge role in both the strength and growth of muscles.  Kill the nerve within a muscle and it will die quickly, no matter which nutrients you intake...

 Dark Chocolate
I've never been one to eat "plain" chocolate bars. They were too  boring, but when a previous order I placed with you guys didn't quite come up to the required weight I decided to give the dark chocolate one a try. NOW I'M HOOKED!!

Every time I've "taken a chance" and ordered something from you guys I've never been disappointed. Whether it's meat, soap, honey, a Flavorwave, or more, I've always been well pleased. You guys certainly live up to the Missouri State Motto.

Thanks for taking the time to do what you do so well.

 Seriously Tasty Paleo Meatloaf

Ingredients
:
Paleo Meatloaf
Tomato Sauce:
  • 1 15 oz can of fire roasted tomatoes

  • 1 1/2 c (about 1) roasted red pepper

  • 1/2 onion, roughly chopped

  • 4 cloves garlic

  • Salt & Pepper

Directions:
  1. Place your oven rack in the middle of the oven and preheat it to 350ºF.
  2. In your food processor blend together all the ingredients for the tomato sauce.
  3. In a large bowl use your hands to mix together the ground meats, eggs, almond flour, tomato sauce and salt & pepper. Separate the meatloaf mixture into two 9 inch cake pans. Fill the cake pans to the brim, as the meat loafs will shrink considerably as they cook. Top with the slices of bacon.
  4. Bake for 45 minutes. Turn the oven to broil and get the bacon crispy, about 10 minutes.
  5. While the meatloaf is baking, pour the rest of the tomato sauce into a small saucepot and simmer over medium heat.
  6. Once cool, remove the meatloaf from the pan and slice on the opposite direction you placed the bacon-against the grain, just like meat. Top with the tomato sauce and serve immediately.
