Dear Health-Conscious Reader,

I get a lot of health magazines sent to my clinic. This month, I got a new one called Aging Well. As I was flipping the pages I came across an article called "Nutrition's Role in Sarcopenia Prevention."

Sarcopenia is age-related loss of muscle mass. I've helped thousands of patients prevent this, and gain muscle mass with age to stay independent and active. It's a focus of anti-aging medicine, so I wanted to read what the article had to say.

It talked about who's at risk, signs to look for, and that you should focus on nutrition to prevent muscle loss.

Then I came to their nutrition recommendations. They tell you to get more protein, and give you a list of what to eat. But as I looked down the list I noticed something I couldn't believe. They don't recommend eating any meat for protein.

Peanut butter, protein bars, powdered milk, wheat germ, cheese, nuts, seeds, beans, yogurt, peanut butter... Not once do they mention meat.

It's a shame because eating protein is essential to preventing sarcopenia. And the foods they mention are not complete proteins. They don't have all the essential nutrients your body needs every day.

But it's not just food. There are two other ways to prevent and reverse sarcopenia, which I'll show you in a minute. It's vital that you know them. Every year you lose more and more muscle, and it never lets up. Very often it's hard to notice. As you age, muscle can be replaced by fat. And unless you're watching out for it, you won't see it happening.

But you'll feel it...

Losing your muscle mass opens a Pandora's box of new problems:

  • Weakness 
  • Fatigue 
  • Chronic illness 
  • Diminished sex drive 
  • Erectile dysfunction 
  • Weight gain 
  • Wrinkled, sagging skin 
  • Clouded thinking 
  • Forgetfulness 
  • Depression 
  • Brittle bones
Like a progressive disease, your body simply "wastes away" over the years. In fact, skeletal muscle mass drops between 35% to 40% by the time you reach 80.(1) That's about three pounds every decade.

 Eating This Kind of Seafood Can Increase Belly Fat

Eating seafood can provide a bevy of health benefits. It can reduce the risk of heart disease, boost your brainpower and even keep your skin looking radiant, supple and youthful.

But new research published in the journal Obesity found that a "hidden" ingredient in seafood can actually increase belly fat. And it is this "visceral" fat that is the most dangerous to your health.

Beer Bellies and Muffin Tops... from Pollutants?

In the PIVUS study, researchers measured the levels of 23 persistent environmental toxins in more than 1,000 participants. They also evaluated the amount of belly fat in nearly 300 of the participants using magnetic imaging.

The researchers found that high levels of persistent organic pollutants often found in seafood - including PCBs - were associated with a high proportion of abdominal fat.

So how do these pollutants add inches to your waistline?

They disrupt your hormonal system. This impacts the way fat is metabolized. It also increases cortisol and estrogen levels.

Man-Made "Seafood": Concentrating the Chemicals

You may wonder how seafood gets contaminated with PCBs in the first place.

 

The answer is concentrated fish meal.

On average, it takes five pounds of fish meal to produce just one pound of farmed fish. And this makes farmed fish a highly concentrated source of PCBs.

In fact, the journal Science reports that farmed salmon contain ten times more toxins (PCBs, dioxin, etc.) than wild salmon. What's more, seven out of ten pieces of farmed fish tested had concentrations of PCBs that were high enough to trigger health warnings from the U.S. Environmental Protection Agency (EPA).

And while belly fat is certainly unsightly, PCB exposure is a lot more serious than just your appearance.  Exposure to PCBs has also been linked to diabetes, heart disease, infertility, thyroid dysfunction, neurological damage, and cancer... as well as memory and learning problems...

Milk Ingredient Does a Waistline Good

 

 


A natural ingredient found in milk can protect against obesity even as mice continue to enjoy diets that are high in fat. The researchers who report their findings in the June Cell Metabolism, a Cell Press publication, liken this milk ingredient to a new kind of vitamin.

"This is present in what we've all been eating since day one," says Johan Auwerx of École Polytechnique Fédérale de Lausanne.

The researchers identified this ingredient, known as nicotinamide riboside, as they were searching for alternative ways to boost the well-known gene SIRT1, which comes with benefits for both metabolism and longevity. One way to do that is to target SIRT1 directly, as the red wine ingredient resveratrol appears to do, at least at some doses.

Auwerx's team suspected there might be a simpler way to go about it, by boosting levels of one of SIRT1's molecular sidekicks, the cofactor NAD+.

This milk ingredient does just that in a rather appealing way. Not only is it a natural product, but it also gets trapped within cells, where it can do its magic.

Mice that take nicotinamide riboside in fairly high doses along with their high-fat meals burn more fat and are protected from obesity. They also become better runners thanks to muscles that have greater endurance.

The benefits they observe in mice wouldn't be easy to get from drinking milk alone, Auwerx says. It may be more likely that the compound would serve as a new kind of metabolism-boosting supplement. Tests done in people are now needed to help sort out those details.

On the other hand, he says, this milk substance ultimately offers the same benefits attributed to resveratrol, but in a different way. It's possible that many small effects of ingredients found in our diets could add up to slimmer waistlines -- perhaps longer lives, too.

Summer is here and I am short of my goals to say the least.  What makes this really hard to swallow is that I have been very disciplined with diet and training this winter and spring.  After losing a lot of body fat during the first few months just by cleaning up the diet and exercising, things have slowed down.  I have found it very difficult to break through to the low level body fat I need to show off my abs.  I need to lose 20 pounds of fat without giving up any muscle and I will look great!

I can imagine you are very frustrated since your hard work did not lead you all the way to your goals.  The key to success is working both hard and smart.  It sounds like you have good habits in place, so now you just need to change your tactics to make the body burn more fat as fuel.  The metabolism can fight against you at times if you have been eating too little and exercising too much.

Memphis-Style Barbecue Beef Back Ribs  

 

Memphis-Style Beef Back Ribs     

 Ingredients:

Directions:

  1. Remove the two racks from their packaging, and gently rinse with water and pat dry with paper towels.  Rub the yellow mustard over the tops of the ribs (1/2 tbsp per rack).  
  2. One thing that surprised me is that we didn't season the underside of the ribs at all. In the end, it made sense, both from a culinary standpoint and economically: the well-seasoned tops of the ribs had the overwhelming majority of the meat, and the unseasoned underside's mild taste was an awesome complement to the tasty top. 
  3. Sprinkle 1/4 cup of the barbecue rub on each rack. Set the ribs aside while we prepare the smoker.  
  4. For the uninitiated (which includes myself), here's what a smoker looks like on the inside. The bottom section holds the fire, which allows you to regulate the temperature in the top section. If you're using a grill, this is essentially the same setup as my indirect method of smoking meat, which you can find in recipes like my lemon and dill smoked chicken.  
  5. Add a few handfuls of hardwood charcoal to the bottom element, along with a chunk of hickory and a chunk of applewood. If you're using a grill, the same effect can be produced using wood chips on the heated side of the grill. Light a fire using lighter cubes and allow it to burn for five minutes before closing the drawer.  
  6. Close everything up and allow the top section to reach and stabilize at 300 degrees. This part could take up to 30 minutes.  
  7. Place the ribs in the smoker/grill on roasting pans or on heavy-duty tin foil, and smoke for two hours.  
  8. After two hours, lay out two large sheets of heavy-duty tin foil and pour 1/4 cup of honey on each sheet in a zig-zag pattern like you see above.  
  9. Place the ribs on top of the honey, top-side down. Curl up the sides of the tin foil, add 1/3 cup of red wine to each rack, and then seal up the ribs in the tin foil.  
  10. Place the covered ribs back into the smoker, and smoke for another hour. After one hour, check for tenderness with a toothpick - the meat should be very tender and give way easily. If it's still tough, put it back in the smoker and check it every 20-30 minutes.  
  11. Take the ribs out of the tin foil and return to the smoker/grill for another 30 minutes to finish them off.  
  12. Allow the ribs to rest for at least five minutes before cutting them up. Try not to get any drool on them while you wait.  
  13. Using a knife or kitchen shears, separate each rib for maximum presentation and convenience.  
  14. Spoon on some barbecue sauce right before serving, or serve it on the side. That's it!
