We've had beautiful spring weather in Northeast Missouri this week.  Our fields and pastures greened up in less than two days and flowers will be blooming soon.  All of our animals are enjoying warmer temperatures this week.  Be sure to check out our farm photos below that were taken on recent spring tours of our pig farms. 

We are very excited to introduce a few new products to our menu this week.  We've added some new additions to the bison department, just in time for summer grilling!  We now have Bison Ribeye and Sirloin Steaks in stock, along with hearty Chuck and Sirloin Tip Roasts.  All of our naturally lean bison is 100% grass-fed and finished, which makes it a welcome addition to any dinner table! 

You asked, and we listened.  We had been receiving many requests for a sugar-free organ sausage, granted we weren't using white sugar, but our two most popular organ sausages had honey in them.  So we worked with our processor to completely remove the honey without adding any other type of sugar or sweetener to our best selling Beef Liverwurst and Beef Braunschweiger!  If you are on any type of sweetener restriction - you can now enjoy our healthy organ sausages without the honey!  This also makes it perfect for younger children who aren't supposed to have honey, but can also benefit from the nutrient-dense grass-fed organ meats.  For all the details on our popular organ sausages, be sure to visit our blog

Eating Fish Associated With Lower Risk of Dying Among Older Adults: Risk of Dying from Heart Disease Significantly Lowered  




Older adults who have higher blood levels of omega-3 fatty acids - found in fatty fish and seafood - may be able to lower their overall mortality risk by as much as 27% and their mortality risk from heart disease by about 35%, according to a new study from Harvard School of Public Health (HSPH) and the University of Washington. Researchers found that older adults who had the highest blood levels of the fatty acids found in fish lived, on average, 2.2 years longer than those with lower levels.

"Although eating fish has long been considered part of a healthy diet, few studies have assessed blood omega-3 levels and total deaths in older adults," said lead author Dariush Mozaffarian, associate professor in the Department of Epidemiology at HSPH. "Our findings support the importance of adequate blood omega-3 levels for cardiovascular health, and suggest that later in life these benefits could actually extend the years of remaining life."

The study - the first to look at how objectively measured blood biomarkers of fish consumption relate to total mortality and specific causes of mortality in a general population - appears online April 1, 2013 in Annals of Internal Medicine.

Previous studies have found that fish, which is rich in protein and heart-healthy fatty acids, reduces the risk of dying from heart disease. But the effect on other causes of death or on total mortality has been unclear. With this new study, the researchers sought to paint a clearer picture by examining biomarkers in the blood of adults not taking fish oil supplements, in order to provide the best assessments of the potential effects of dietary consumption of fish on multiple causes of death.

The researchers examined 16 years of data from about 2,700 U.S. adults aged 65 or older who participated in the Cardiovascular Health Study (CHS), a long-term study supported by the National Heart, Lung, and Blood Institute. Participants came from four U.S. communities in North Carolina, California, Maryland, and Pennsylvania; and all were generally healthy at baseline. At baseline and regularly during follow-up, participants had blood drawn, underwent physical examinations and diagnostic testing, and were questioned about their health status, medical history, and lifestyle.

The researchers analyzed the total proportion of blood omega-3 fatty acids, including three specific ones, in participants' blood samples at baseline. After adjusting for demographic, cardiovascular, lifestyle, and dietary factors, they found that the three fatty acids - both individually and combined - were associated with a significantly lower risk of mortality. One type in particular - docosahexaenoic acid, or DHA - was most strongly related to lower risk of coronary heart disease (CHD) death (40% lower risk), especially CHD death due to arrhythmias (electrical disturbances of the heart rhythm) (45% lower risk). Of the other blood fatty acids measured - eicosapentaenoic acid (EPA) and docosapentaenoic acid (DPA) - DPA was most strongly associated with lower risk of stroke death, and EPA most strongly linked with lower risk of nonfatal heart attack. None of these fatty acids were strongly related to other, noncardiovascular causes of death.

Overall, study participants with the highest levels of all three types of fatty acids had a 27% lower risk of total mortality due to all causes.

When the researchers looked at how dietary intake of omega-3 fatty acids related to blood levels, the steepest rise in blood levels occurred when going from very low intake to about 400 mg per day; blood levels rose much more gradually thereafter. "The findings suggest that the biggest bang-for-your-buck is for going from no intake to modest intake, or about two servings of fatty fish per week," said Mozaffarian.

Kashmiri Lamb Lollipops     

 

Lamb Lollipops 

 

  Ingredients: 

  • 4 lamb rib chops, frenched completely trimmed 
  • 3/4 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 3/4 teaspoon black peppercorns
  • 1 3/4 cup full-fat coconut milk (one 13.5 ounce can)
  • 1/4 cup water or white wine
  • 2 cinnamon sticks, broken into a few pieces
  • Seeds from 10 whole green cardamom pods
  • 10 whole cloves
  • 1 inch piece of ginger, grated
  • 1 medium onion, finely chopped
  • 2/3 cup arrowroot flour (traditionally chick pea flour)
  • 2 teaspoons chili powder
  • 1/4 cup water
  • 1/2 cup thick plain yogurt (we like goat)
  • Palm shortening, or tallow for deep frying
  • Lime wedges  

Directions:

  1. In a small frying pan, dry roast the cumin and coriander seeds till aromatic. Crush the seeds with the peppercorns in a spice grinder or mortar & pestle. 
  2. Transfer the spice mixture to a large sauce pan and add the coconut milk, wine/water, cinnamon, cardamom, cloves, ginger and onion. 
  3. Bring to a boil over a medium heat. Gently drop the lamb chops into the liquid and bring it back to a boil. Reduce heat and simmer for 45 minutes to 1 hour or until the liquid is very thick and reduced. Remove the lamb chops and pat dry. Discard the left over liquid. 
  4. Whisk together the arrowroot and chili powder into the water and yogurt to make a thick batter. 
  5. Fill a heavy based saucepan one-third full of palm shortening/tallow. Heat till it reaches about 350 degrees on a candy/deep fry thermometer. 
  6. Dip the lamb cutlets in the yogurt batter, shaking off the excess and fry in small batches until crisp and golden. Remove from the oil and drain on paper towels. Allow the oil to heat back up to 350 degrees before starting the next batch. 
  7. Serve with lime wedges.
