Chicken Stock & Gelatin Are Here!
Steaks & Stew Beef on Sale!

January 19, 2014
 Monticello, Missouri
Dear John,
Alabama Grazing
We've had another busy week here at US Wellness - thank you to all of our customers who have helped us kick off another successful year!

If losing weight is one of your New Year's resolutions, be sure to see Dr. Al Sears' article below.  Research has shown that eating more protein can be a very effective weight loss tool.  Breakfast is a great meal to start beefing up your protein intake.  A hearty breakfast will keep you fuller longer and avoid eating binges late in the morning or early afternoon.  Here are some of our favorite sugar-free breakfast items that are packed with protein:

Add fried eggs and a slice of avocado and you have the breakfast of champs!

We are very excited to introduce three new products this week.  We have been busy with R&D over the last couple of months perfecting new recipes for Chicken Stock and Duck Stock, and both are available online now.  When making the Chicken Stock, we found that by changing the cooling process, we ended up with a much thicker Chicken Gelatin - which is also available online now.  All three are nutrient powerhouses, and are made with bones from free range chickens and ducks on a non-gmo diet.  See our new bone stock blog for more information and for links to all of the nutritional research on the many benefits of bone stock.

One of our winter favorites is on sale this week.  The one pound packages of Stew Beef are a necessity in our freezers, as they can be used in so many different recipes!  Ideal for chili, stews and any other winter dinner recipe, the Stew Beef also takes very well to marinades.  Find more recipes in our beef recipe section online.

Many of our most popular items restocked this week - marrow bones, beef primals, pork sausage, pork lard and ground beef are all back in stock.  Stay tuned on Facebook for all of the latest news, sales, giveaways, farm photos and office updates- like the new tread desk we got this week!

Winter Regards,

John, Lee Ann, Tressa, Jennifer, Amanda & Laura on behalf of the farm families of US Wellness Meats.

Your New Year's Resolution

By: Al Sears, MD

Happy New Year to You and Your Family,

As the New Year begins, you may be thinking of making the same resolution I make each year. I want to get a little leaner and stay that way.

I seem to be able to accomplish most of my financial goals every year. As far as my social goals go - reaching out to my family and getting back in touch with people from my younger days - I seldom seem to get around to those. But I'm still going to resolve to try.

It's keeping those few extra pounds off after I lose them that seems to be a big challenge. At least, it is for me.

I stay pretty fit, and I can get lean playing tennis and doing P.A.C.E. But then between traveling, working, writing, seeing patients... a few pounds always seem to creep back on. If I don't do anything about it, extra fat will settle in around my waist.

So this year, I'm going to stick to one simple principle: eat extra protein.

Protein helps you build muscle and lose fat. But it may surprise you that eating extra protein helps you keep the fat from coming back.

It's all about satiety - that feeling of being full. Protein gives you the feeling that the meal is done and you've had enough. Much more so than carbs or fat.

A study from doctors in the Netherlands proves this point. After the test subjects lost fifteen pounds each, they were divided into two groups. One group ate a regular diet. The other ate the same, but added an extra thirty grams of protein.

The group that didn't have the protein gained back 350% more weight than the group with the protein supplement.(1) And the few pounds the protein group gained back was muscle - not fat....

The Surprising Brain-Protecting Nutrient (You've Been Told to Avoid!)

By: Kelley Herring, Healing Gourmet

In my last article, I told you about the recent discovery of the connection between gluten consumption and memory loss and cognitive decline.

Today, I'm going to share a super-nutrient that is absolutely critical to brain health, memory, mood and cognition... yet it has been maligned by "modern" medicine for decades.

Cholesterol!

Your Brain on Cholesterol: Stronger, Smarter, Faster, Better!

The brain is an amazing organ with vast capabilities. It processes and remembers information and guides reasoning and logic... not to mention the millions of transmission signals it must send just to keep your body running.

And get this: Over half your brain is made of fat and cholesterol.

In fact, while your brain comprises roughly two percent of your body's total mass, it contains more than 25% of your body's cholesterol.

And for good reason...

Patient Loses Over 120 Pounds Without Surgery, Medication

For much of his life Tom Hoppensteadt thought the best thing to do with a scale was to avoid it. When he was diagnosed with a low-grade lymphoma at age 50 and learned he weighed over 300 pounds, it sounded an alarm.

"Through my 40s I didn't lead a healthy lifestyle. I ate what I wanted to eat and didn't exercise at all. I really was just very inactive. I knew what I should be doing, I just didn't do it," said Tom.

When he began seeing Keith Veselik, MD, primary care physician at Loyola University Health System, he learned the cancer diagnosis was the least of his worries.

"Tom has a form of cancer that doesn't always require treatment. It could be years before it's a problem for him," Veselik said. "His weight, on the other hand, was putting him at a more immediate health danger. The cancer could hang around for many years without causing any harm. We could just watch that. But diabetes and heart attacks - those were very real and urgent concerns."

"He was pretty straight with me," Tom said. "He said, 'drop the weight or you'll die of a heart attack before the cancer will get you.' Now, that's motivation." Tom started the lifestyle changes slowly. He walked 2-3 times a week and kept a food journal. Even those small steps started to make an impact. He was losing a pound to a pound and a half a week. But, Tom's health concerns continued to mount and, after being hospitalized, he decided it was time to do something more.

"I started using the MyFitnessPal app to monitor my exercise and calorie intake. I discovered the importance of portion control and started increasing my exercise routine," Tom said.

He now takes a spinning class 3-4 times a week for 45 minutes and has started running and swimming 2-3 times a week as well. In addition, he discovered the benefits of yoga.

"I lost over 120 pounds and went from a size 46 waist to a size 36 all just by changing my lifestyle," Tom said. "Dr. Veselik kept talking to me about leading a healthy lifestyle and that was a huge encouragement. He made me realize that I was worth this effort. You really have to give yourself over to it. You have to be committed to making this happen."

Last year Tom completed a triathlon and Dr. Veselik took him off almost all of his blood pressure and cholesterol medications.

"Like everyone else I struggle to get into the gym and sometimes I just don't make it, especially now that I have completed my goal," Tom said. "But, I continue to count all my calories and now I'm trying to find that next goal to keep me motivated."

"There is so much research out there about the benefits of living a healthy lifestyle. If I told someone I had a magic pill that would allow them to live a healthier, longer life they would pay whatever price to get it. That doesn't come in pill form. It can come from diet and exercise," Veselik said.

Rapid Fat Loss and Razor Sharp Definition with Mechanical Advantage Set Videos

By: Scott Mendelson

Scott,

I have been weight training for over five years and feel like my body does not respond well to programs that worked well previously.  I am looking for something fresh to kick start fat burning and improve definition.  I struggle with diets and have trouble sticking to anything longer than a week.  I need your top five simple nutrition tips!

Travis

Travis,

Yes, you need fresh stimuli to get progress going.  After reviewing your training programs and other feedback sent by email, we need to transition the focus to quality over quantity as at age 44 your ability to recover from training is not as good now as it was ten years ago.  However, we can take full advantage of your mature nervous system and very high level of strength to promote rapid fat burning and improved definition.

Give It Time!

I am going to post a response to your great nutrition question on the blog in detail.  The first tip will be to eliminate refined foods and focus on organic food consumption to improve body composition as well as daily energy/performance.  You must give an organic diet adequate time to work in order to earn the full fat burning and energy benefits.

In most cases it takes at least two weeks for the body to make positive adaptations such as transitioning to using stored fat as an efficient energy source...

Pumpkin Chorizo Soup

Pumpkin Chorizo Soup

Ingredients:
  • 1 tbsp olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tsp dried marjoram
  • 1 tsp dried Mexican oregano (regular/Mediterranean oregano okay)
  • 1/2 tsp ground cumin
  • 2 15oz cans pumpkin puree
  • 3 cups chicken broth
  • 1/2 lb fresh ground chorizo sausage
  • salt and black pepper to taste (about 1 tsp salt, 1/2 tsp pepper)
  • fresh cilantro to garnish, chopped

Directions:

  1. Warm the olive oil in a large, deep skillet or dutch oven on medium heat for one minute. Add the onion and saute until translucent, about 6 minutes. Add the garlic and spices and saute until aromatic, about 30 seconds.
  2. Add the pumpkin puree and chicken broth, stirring to combine. Bring to a simmer, then cover and reduce heat to low. Simmer for 20 minutes to allow flavors to marry.
  3. As the soup simmers, saute the chorizo in a separate pan over medium heat until cooked through, about 5 minutes, then set aside.
  4. Blend the soup until smooth and return to the skillet (alternatively, use an immersion blender). It should be thick but not overly so (think tomato or split pea soup) - if it's too thick, add a little water. Stir in almost all of the chorizo, then season to taste. Divide the soup into 4 bowls and scatter with chopped cilantro and the reserved chorizo, then serve.
