Happy Mother's Day!  To all of the moms reading this weekend, we hope you are enjoying a happy and relaxing Mother's Day. 

We are enjoying a warm, sunny weekend here in Northeast Missouri.  Our pastures are finally lush and green and after what seemed like a never-ending winter, we are thrilled to see the sun again. 

Does saturated fat cause heart disease?  It has long been a common belief that saturated fats are a direct cause of heart disease, and that our intake of red meats and butter should be regulated.  However, a new study is implying that the saturated fat/heart disease relationship may be a big misunderstanding.  This article reports on the most recent findings, explains how trans fats are involved, and advises why you might want to cut back on the margarine, and switch back to butter.  

We are very excited to feature Cassy Garcia, author of the popular fitness blog, Fed & Fit, as our feature chef this month.  She graciously answered all of our questions and shared some of her very unique recipes, one of which can be found in our recipe section below.  Be sure to check out her website for plenty more paleo-friendly fare, even a recipe for paleo ranch dressing!

Nature Is Better But...

Nature is better until proven otherwise. It's a small pearl of wisdom that I've gained in the years of being in medical practice.

Yet, although this may seem self-evident, what is "natural" has become the issue. We live in an unnatural world... and not only that, we've kind of erased our footsteps back to what is truly natural to us.

Most people are not even aware of what the human body requires for activity level and nutrition.

People are told that eating grains is natural. That might be true for birds, but not for us.

This is why "Paleo" is a step in the right direction.

Things went drastically wrong for us health-wise when people started to use technology to harvest grains. This gave us very low-fat, low-protein, low-nutrient diet.

People got smaller, and people got sick after making annual seed crops their primary food.

A new study gives us fresh evidence that this is true.

We already knew that farming made the Greeks lose height, and the Indians' heads shrink.

Now a study from Cambridge University shows that after agriculture became dominant in Central Europe around 7,000 years ago, the bones of those people became progressively weaker. As time went by, they became less active and slower.(1)

Modern diet advice has ignored all this evidence, and instead doubled down on that terrible advice to eat a grain-based diet.

The establishment recommends you load up on starches, and says meat and eggs will kill you.

Zinc Deficiency: An Epidemic?

When you think of the health benefits of zinc, you probably think of immune health first. Zinc supplements are the first thing many of us turn to when we feel a cold or flu coming on. And for good reason, because zinc is essential for a well-functioning immune system. But the benefits of this vital mineral go far beyond helping to ward off the common cold.

In fact, zinc is vital to your brain - for learning and consolidating memories and helping to regulate your mood. It has also been found to boost heart health, reduce the risk of diabetes and cancer, support the gastrointestinal system and reduce leaky gut, enhance athletic performance and even support hormonal health and fertility.

Unfortunately, most people don't get enough of this crucial nutrient. According to the World Health Organization one-third of the world's population - over 2 billion people - are deficient in zinc.

And while it is estimated that only 1 in 10 Americans are technically considered "zinc deficient," a much higher percentage are still grossly insufficient.

And one of the primary causes is a grain-rich diet.

How Does Stress Increase Risk for Stroke, Heart Attack?

 
Scientists have shown that anger, anxiety, and depression not only affect the functioning of the heart, but also increase the risk for heart disease.

Stroke and heart attacks are the end products of progressive damage to blood vessels supplying the heart and brain, a process called atherosclerosis. Atherosclerosis progresses when there are high levels of chemicals in the body called pro-inflammatory cytokines.

It is thought that persisting stress increases the risk for atherosclerosis and cardiovascular disease by evoking negative emotions that, in turn, raise the levels of pro-inflammatory chemicals in the body.

Researchers have now investigated the underlying neural circuitry of this process, and report their findings in the current issue of Biological Psychiatry.

"Drawing upon the observation that many of the same brain areas involved in emotion are also involved in sensing and regulating levels of inflammation in the body, we hypothesized that brain activity linked to negative emotions -- specifically efforts to regulate negative emotions - would relate to physical signs of risk for heart disease," explained Dr. Peter Gianaros, Associate Professor at the University of Pittsburgh and first author on the study.

To conduct the study, Gianaros and his colleagues recruited 157 healthy adult volunteers who were asked to regulate their emotional reactions to unpleasant pictures while their brain activity was measured with functional imaging. The researchers also scanned their arteries for signs of atherosclerosis to assess heart disease risk and measured levels of inflammation in the bloodstream, a major physiological risk factor for atherosclerosis and premature death by heart disease.

They found that individuals who show greater brain activation when regulating their negative emotions also exhibit elevated blood levels of interleukin-6, one of the body's pro-inflammatory cytokines, and increased thickness of the carotid artery wall, a marker of atherosclerosis.

The inflammation levels accounted for the link between signs of atherosclerosis and brain activity patterns seen during emotion regulation. Importantly, the findings were significant even after controlling for a number of different factors, like age, gender, smoking, and other conventional heart disease risk factors.

"These new findings agree with the popular belief that emotions are connected to heart health," said Gianaros. "We think that the mechanistic basis for this connection may lie in the functioning of brain regions important for regulating both emotion and inflammation."

These findings may have implications for brain-based prevention and intervention efforts to improve heart health and protect against heart disease."

"It is remarkable to see the links develop between negative emotional states, brain circuits, inflammation, and markers of poor physical health," said Dr. John Krystal, Editor of Biological Psychiatry. "As we identify the key mechanisms linking brain and body, we may be able to also break the cycle through which stress and depression impair physical health."

I want GREAT ABS like my coworker who is one of your clients and was showing off great pictures from his recent vacation.   I have been training for a long time with great success, maintaining a lean physique (12% body fat by bod pod , but during the last ten weeks I have not been able to reduce body fat levels needed to improve abdominal definition.  My wife also trains very consistently with weights, but her thigh/hip body fat is extremely stubborn.  We consume an organic diet and are looking for ways to speed up progress through nutrition as well.

BBQ Slow Cooker Baby Back Ribs

BBQ Sauce (makes 2 batches):
  • 2 Tbl butter 
  • 24 oz. strained tomatoes 
  • 7 oz. tomato paste 
  • 1/2 cup apple cider vinegar 
  • 1/3 cup molasses 
  • 1/3 cup coconut aminos 
  • 1 Tbl garlic powder 
  • 1 Tbl onion powder 
  • 1 Tbl ancho chili powder {may substitute regular chili powder} 
  • 1 tsp salt 
  • 1 tsp pepper  

Ribs:  

BBQ Sauce Directions:   

  • Melt the butter in a large saucepan. 
  • Add the rest of the ingredients and whisk together. 
  • Let it simmer on low for 5 minutes, stirring occasionally. 
  • Remove from heat and either use immediately or can to store. 

Ribs Directions:

  1. Pat ribs dry with paper towels. 
  2. Rub with salt and pepper. 
  3. Lay meat-side up in slow cooker {or crockpot}. 
  4. Pour half of the BBQ sauce over the ribs, cover, and cook on high for 7-8 hours. 
  5. Before serving and if you want the ribs more caramelized, turn oven to 450°F and then bake the ribs for no more than 5 minutes. Watch carefully so they don't burn. 
  6. Cut and serve with extra BBQ sauce. Enjoy!
