Recipe Corner - Roasted Brussel Sprouts

Horseshoe Pit
Dear John,
The phrase "close only counts in horseshoes and hand grenades" is used to call others out for a pedestrian "we almost made it" effort.  We see evidence of this "good enough" philosophy in all the throw-away devices, and mediocre merchandise that we have to replace on a too frequent basis.

As the "real food" movement grows in popularity, this apathetic acceptance of almost good enough has crept onto our plates and into our cupboards.  As many of your "healthy" food options are produced with this same "close is good enough" attitude.

But We Believe ...

"Close" is not good enough
,

That's why our meats have always come from the healthiest pasture-raised animals.  Our animals are grass-fed and grass-finished, in addition to being hormone and GMO free.  When it comes to the health of your family you can trust that we will only accept a "ringer."

So enjoy your Thanksgiving meal with the peace of mind that your family is consuming only the highest quality meats.

News & Notes:

Black Friday is right around the corner.  Make sure to stock up on some delicious snacks like our chocolate, snack bars, pork rinds, or nuts to keep you at top level performance for the shopping marathon.

IMPORTANT ... Due to the Thanksgiving holiday all orders placed after 12:00pm CST (Noon) on Monday, November 23rd, will be held and shipped on Monday, November 30.

If you suffer with back pain like thousands of Americans, in this week's article Dr. Sears shares one simple exercise that can help.  Remember to find the 15% red letter discount code.

There has been a lot of buzz in the media recently about red meat and cancer.  Kelley's article will provide you with some interesting facts about the study that caused all the commotion.  And she gives us some great information about what we really need to be concerned with when consuming red meat.

With Thanksgiving being consumed here at home, we must stop and give pause to our military families with an empty chair at the table......for a mom, dad, son or daughter defending freedom 239 years and counting.

Best Thanksgiving regards,

John, Lee Ann, Tressa, Laura, Deric, and Courtney on behalf of the farm families of US Wellness Meats.

The Simple Answer to Back Pain

Our Paleo ancestors had powerful physiques. They relied on their own body strength to build shelter, haul water, escape
from predators and trap food.

Each day was packed with "back-breaking" work. Yet cave
dwellers couldn't slow down for an aching back. And they didn't have to. Their bodies - like ours - were designed to move and work.

But today our lives are full of modern conveniences. We often sit for 10 hours a day and move around for only an hour or two.  And we don't move our bodies the same way our ancestors did.

standing rib roast small

"Really, Really Good"

We've ordered this roast a number of times since we started using US Wellness. It has never disappointed. It's easy to roast, has exceptional flavor every single time. It's a pricey roast (although it can be more expensive if purchased locally) but worth every single dime.

Does Red Meat Cause Cancer?
If you read the papers or watch the news, there is a good
chance that you've seen the latest nutrition report from the
World Health Organization. The story has been reported
worldwide by virtually every major news organization.

In case you're not aware, the report, produced by the International Agency for Research on Cancer, implicates processed meat and red meat in colon cancer.

Roasted Brussel Sprouts
Great Thanksgiving Side Dish
Roasted Brussel Sprouts
Author: Russ Crandall, The Domestic Man

Difficulty:  Easy
Time:  45 min
Serves:  4 as a side

Ingredients:
  • 8 oz bacon cut into strips
  • 1 lb Brussel Sprouts (thinly sliced lengthwise)
  • 1 tbsp ghee
  • Salt & Pepper to taste

Directions:
  1. Heat a stainless steel skillet over medium heat, then add the bacon. Cook until crispy and the fat has rendered, about 10 minutes, moving the bacon pieces occasionally so that they cook evenly. As the bacon cooks, pre-heat the oven to 400F and slice the brussels sprouts.
  2. With tongs, remove the cooked bacon and set it on some paper towels to drain (keep the rendered bacon fat in the skillet). Add the ghee to the rendered fat and stir together, then add the brussels sprouts and toss until evenly coated. Transfer the skillet to the oven and roast until browned and crispy, about 20 minutes, turning after 10 minutes and again after another 5 minutes.
  3. Remove the skillet from the oven, add the bacon back into the skillet, and toss until incorporated. Add salt and pepper to taste and serve.

Slicing the brussels sprouts is probably the most labor-intensive step in this recipe, but it definitely helps to cut the cooking time and give you more surface area (which = more tasty browned bits).
