The last full week of the 2015 baseball season starts today.  The first team was fielded by Cincinnati in 1869.  The National League organized in 1876 followed by the American League in 1901.  In 2000 both leagues combined with 30 teams in the modern era.

Professional athletes in all sports have discovered grass-fed meats during the history of our company.  US Wellness has some great stories dealing with the top notch athletes who have discovered that photo lipids from grazing animals can yield an edge on the field of competition.  Higher levels of omega 3, lower amounts of omega 6, and increased CLA levels might be the edge in the 1/100 of a second it takes to size up a 98 mph fastball!

I just returned from a 2 week vacation where I ate anything and everything.  Some carbohydrate intake on the first day triggered problems for me ongoing by spiking my appetite.   Do you suggest carbohydrate consumption for your clients? I actually ordered this with concern. Most "conventional" precooked pot roasts are salty & taste like canned beef soup, which I don't care for. But I wanted a quick precooked meal on hand so gave it a try. So glad I did. Not salty & had a wonderful flavor!

Paleo Creole Ham & Cauliflower Rice

Creole Ham & Cauliflower Rice
Mmmmmm !!!!!!!

Serves:  2-4

Prep Time:  20 min
Cook Time:  30 min 


Ingredients:  
  • 2 heads fresh cauliflower
  • 1 pound ham, diced
  • 1 medium onion, diced (1/2 cup)
  • 1/2 green bell pepper, diced (1/2 cup)
  • 1/2 red bell pepper, diced (1/2 cup)
  • 2-3 tablespoons cooking fat, melted
  • 3 cloves garlic, minced
  • 1/2 tablespoon dried thyme leaves
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon ground cayenne
  • 1/4 teaspoon celery seed
     
Directions:

  1. Preheat oven to 425 degrees F. 
  2. Break the cauliflower into florets, removing the stems. Place the florets in a food processor and pulse until the cauliflower looks like rice. This takes about 7 to 10 one-second pulses. You may need to do this in multiple batches to avoid overcrowding.
  3. Place the riced cauliflower in a very large mixing bowl. Add the ham, onion, and bell peppers. Toss with a spatula or two spoons until everything is evenly distributed.
  4. In a small bowl, combine the fat, garlic, salt, thyme, black pepper, cayenne, and celery seed. Mix, then pour over the cauliflower. Toss for at least two minutes so the ingredients are evenly coated with the flavored fat.
  5. Divide the rice between two large, rimmed baking sheets (or a roasting pan) and roast in the oven 30-35 minutes, stirring about halfway through the baking time. At the end, the cauliflower should be tender, with little brown bits beginning to appear.

OPTIONAL: For added caramelization, zap each tray under the broiler for about 2 minutes after the baking time is up.
