The practice of fermenting foods has been around literally for thousands of years. Historians estimate it may date back as far as 6000 B.C. Salting, smoking, pickling, and fermentation are some of the ancient forms of food preservation that continue to be useful today. Before refrigeration, these were common methods used to keep food from spoiling. Besides being useful for preservation, fermentation also has its health benefits. Modern medicine has been important to our longevity. Unfortunately, with the rise of antibiotics, stressful lifestyles, and factory processed foods, we've also experienced a reduction in healthy gut bacteria. Researchers are only now coming to terms with the importance of healthy gut balance and the relation with our immune systems and overall health. These days it is quite popular to lead a dairy-free life. For our friends who follow a dairy-free lifestyle we have a special recipe by August 2020 Featured Chef Stacey Venancio. Stacey’s Novolone Cheese (dairy-free bone marrow cheese) is just the treat for you.


“Bone marrow gives this Paleo cheese a delicious savory flavor that will make you forget it’s dairy-free!  ¼ c  bacon fat, tallow or duck fat can also be used in place of the marrow. This cheese is sliceable and shreddable, and when heated it has the ooey-gooey texture you’d expect from cheese- and it is absolutely delicious!!”

August rains have generated lush pastures in Northeast Missouri in 2020. This paddock has had a long rest cycle creating a seven course meal dining experience for this group of grazers. Hair coats on the cattle pictured exhibit signs of vibrant health. The thymus gland hair swirl is very obvious on most of these animals. It is tell-tale marker of excellent health.
