Soaking Up Sunlight

One of the main ingredients for a healthy immune system is Vitamin D. It is vitally important for respiratory health and it helps your body keep a healthy balance of calcium and phosphorus. Vitamin D plays a big role in our overall health. Most people know it as the sunshine vitamin. The production of Vitamin D in our body is a complicated process, but it starts when we're exposed to UV rays from the sun.


While much of the country is still social distancing, what are some fun, safe ways to get some much needed sunshine?


1. Light up the grill - It is that time of year to put on your BBQ apron and enjoy the great outdoors while grilling your favorite steak, chops, burgers and franks

2. Wash the car - To some this may sound like fun, while others will consider it a chore. Either way, if you get the children involved, expect a full-scale water fight to ensue.

3. Beach it - If you live close to water, a beach day offers an excellent opportunity to soak up sunshine while maintaining a comfort zone. 

4. Gardening - Gardening not only provides fresh produce to enjoy, it also requires time in the sun for tilling, planting, weeding, and harvest. It may sound like work, but in July when you're enjoying the fruits of your labor (fresh tomatoes, cucumbers, asparagus, squash, etc), the effort will all make sense. If you don't have room or don't have the time to garden, U-pick fruit & veggie farms are a great way to get fresh produce & enjoy time outdoors. It doesn't take long to collect a nice haul of strawberries, apples, green beans, blueberries, blackberries, or whatever is in season.


Of course some seasons can make it difficult to get enough sunshine and it may not be possible for everyone to get outside. Fortunately, foods like wild-caught seafood, cheeses, eggs, spinach and liver all have copious amounts of vitamin D.

Salmon is a favorite amongst health-conscious individuals. Not only is salmon a great source of protein, but it is rich in Omega-3 fatty acids, potassium, B Vitamins, and selenium. A special thank you to May Featured Chef Mandy Pagano for sharing her delicious Simple Salmon recipe.

Missouri cattle are grazing on an exquisite pasture salad bar making the first pass in paddock number 21 on May 12th. Twenty seven years of continuous forage has healed a highly eroded hillside when it was seeded into a mix of perennial forages in 1993. This hillside is storing carbon and regenerating soil with sunlight, rainfall, hoof and grazing impact from ruminant animals, and most importantly the billions of unsung soil microbes working 24/7 below the surface. This group of cattle are reaping the benefits of 27 years of regenerative soil management.
