Old Fashioned Holiday Meal Prep
As Thanksgiving approaches, traditional roasts and main courses take center stage in kitchens across the country. The most common centerpiece is the turkey — especially pasture-raised varieties that offer richer flavor and better texture than conventionally raised birds. Alongside pastured turkey, grass-fed beef roasts, pastured pork roasts, and pastured duck are also popular choices for their depth of flavor, presentation, and nutritional benefits. These meats, raised in natural environments, contribute to a more wholesome and satisfying holiday meal, especially when slow-roasted with herbs and root vegetables.
A hundred years ago, Thanksgiving meals looked somewhat different but still celebrated abundance and seasonal harvests. Roasts of wild game such as venison, duck, and goose were common, especially in rural areas. Pork roasts and beef were also popular, often prepared in cast iron ovens or open hearths. These choices reflected what was locally available and preserved well. Pastured meats were the norm, not the exception, and meals were built around what families raised or hunted themselves. The emphasis was on hearty, nourishing food that could feed large gatherings.
Side dishes have always played a vital role in Thanksgiving feasts. Today, staples like mashed potatoes, stuffing, roasted Brussels sprouts, glazed carrots, and cranberry sauce are expected on the table. Many of these dishes come from ancestral traditions, where root vegetables and grains were used to stretch meals and complement rich meats. Homemade gravies and sauces made from pan drippings add depth and tie the meal together. The use of fresh, seasonal produce — especially from local farms — enhances both flavor and nutrition.
No Thanksgiving is complete without dessert, and pies are the undisputed stars. Pumpkin pie remains the most iconic, followed closely by pecan, apple, and sweet potato pies. These desserts reflect the autumn harvest and have been beloved for generations. A century ago, pies were often made with lard-based crusts and sweetened with molasses or honey, depending on availability. Today, many bakers opt for butter or leaf lard for flakier crusts and use organic ingredients to preserve tradition while elevating quality. Whether classic or modern, these pies bring warmth and nostalgia to the holiday table.
