Gather Together...
Happy Easter! We hope this holiday finds you gathered with loved ones, sharing warm fellowship and a good meal. Whether the centerpiece is ham or lamb, beef or chicken, spring celebrations have a way of bringing everyone together around the table to experience a shared moment. There is something special about this season that invites us to slow down, reflect, and enjoy one another’s company.
Springtime also stirs memories of family gatherings from years past. Many of us remember Grandma at the stove, filling the house with savory aromas that drew us into the kitchen long before the meal was ready. There were prayers of thanksgiving, plates piled high with meats, potatoes, creamy vegetables, and bright fruity sides. Dessert tables were often crowded with pies, cobblers, and cakes. In families that love good food, good cooks are an essential part of holidays. Every family has these kitchen superheroes. You know who you are.☺️
Not so many years ago, most home kitchens relied on traditional animal fats for everyday cooking. A container of lard or tallow was common for baking and frying, and butter was simply butter, skimmed from the milk of dairy cows. Over time, Americans were persuaded to set those foods aside in favor of modern alternatives. That message took hold for a while, but most households are now taking a fresh look at what earlier generations used and realizing we were snookered by big food marketing efforts.
As it turns out, Grandma and Grandpa may have known a thing or two. Real butter and tallow from grass-fed cows offer rich flavor and a return to simpler, more honest ingredients, especially when compared to highly processed oils. Embracing these traditions can elevate everyday cooking and reconnect us with the wisdom of the past. Perhaps this season is a good time to celebrate that our grandparents were often wiser than we once believed.
All the Best, Team USWM

Guide to Pork
When you compare pasture-raised pork to conventional store-bought pork, you are not comparing two versions of the same food. You are comparing two entirely different biological outcomes driven by radically different farming systems.
